For this keto banana pudding recipe you will need:

  • 3/4 cup Heavy Cream (full fat)
  • 4 large Egg Yolks
  • 1/2 cup Almond Milk
  • 1/4 cup Banana (mashed)
  • 2 1/2 tablespoons Monk Fruit or Erythritol
  • 1/4 teaspoon Xanthan Gum
  • 3/4 teaspoon Pure Vanilla Extract

🍌 Making Keto Banana Pudding

Follow this simple recipe to make the best keto friendly banana pudding ever!

Step 1

Start by mashing the banana using a fork. Then, place a saucepan over medium heat.

Add heavy cream, sweetener, and almond milk. Bring the mixture to a simmer and then mix in the vanilla extract.

Step 2

Remove the saucepan from the heat. Take a bowl, and whisk the egg yolks until they are fluffy (I used an electric mixer). Then, add the mashed banana and blend them together.

Step 3

Pour half of the cream mixture into the egg yolks and whisk until fully combined.

Then, pour this mixture back into the saucepan with the remaining cream. Whisk the blend with a balloon whisk or electric mixer until well mixed.

Step 4

Heat the pudding mix over low heat and continue whisking for about 5 minutes (if you stop whisking- the egg yolks will curdle).

Step 5

Turn off the heat. Add the xanthan gum on top and whisk to combine.

Step 6

And now for the final step! Divide the mixture between dessert cups and place in the fridge for 1:30 hours. I added whipped cream on top for extra flavor.

I added the xanthan gum to my carb free banana pudding to thicken it up. Xanthan gum is an amazing ingredient when it comes to thickening and binding ingredients together.

I use it in many of my keto recipes, and it never fails to make my desserts taste amazing.

Sweetener

To sweeten this keto banana cream pudding, I added Monk Fruit Sweetener.

Monk Fruit Sweetener is a natural sweetener made from extracts of the monk fruit, and it has zero calories and zero net carbs.

You can also use Stevia, Erythritol, or your favorite sugar free sweetener. If you want your keto banana pudding extra sweet, feel free to add more sweetener.

I don’t like overly sweet desserts, so I added just enough to make it sweet enough for my taste.
