Add heavy cream, sweetener, and almond milk. Bring the mixture to a simmer and then mix in the vanilla extract.

Step 2

Remove the saucepan from the heat. Take a bowl, and whisk the egg yolks until they are fluffy (I used an electric mixer). Then, add the mashed banana and blend them together.

Step 3

Pour half of the cream mixture into the egg yolks and whisk until fully combined.

Then, pour this mixture back into the saucepan with the remaining cream. Whisk the blend with a balloon whisk or electric mixer until well mixed.

Step 4

Heat the pudding mix over low heat and continue whisking for about 5 minutes (if you stop whisking- the egg yolks will curdle).

Step 5

Turn off the heat. Add the xanthan gum on top and whisk to combine.

Step 6

And now for the final step! Divide the mixture between dessert cups and place in the fridge for 1:30 hours. I added whipped cream on top for extra flavor.

That’s it! Enjoy this amazing keto banana pudding!

There are hundreds of keto pudding recipes online. Some of them are great, while others are not so good.

On KetoAndEat you will find the BEST keto recipes. Here are some of my favorite low-carb pudding recipes:

Banana On Keto?!

As you probably know, banana is very high in carbs. So, how exactly I can make a delicious keto banana pudding and still keep it low carb?

The answer is simple- moderate the amount of banana used. Traditional banana pudding recipes usually call for a cup or more of mashed banana.

But, to make it keto friendly, you can use one small banana and still get the great banana flavor.

I also add other low carb keto friendly ingredients that give the volume, texture, and flavor of the pudding.

Xanthan Gum

I added the xanthan gum to my carb free banana pudding to thicken it up. Xanthan gum is an amazing ingredient when it comes to thickening and binding ingredients together.

I use it in many of my keto recipes, and it never fails to make my desserts taste amazing.

Sweetener

To sweeten this keto banana cream pudding, I added Monk Fruit Sweetener.

Monk Fruit Sweetener is a natural sweetener made from extracts of the monk fruit, and it has zero calories and zero net carbs.

You can also use Stevia, Erythritol, or your favorite sugar free sweetener. If you want your keto banana pudding extra sweet, feel free to add more sweetener.

I don’t like overly sweet desserts, so I added just enough to make it sweet enough for my taste.

I hope you liked my banana pudding keto recipe. It’s one of the tastiest keto pudding recipes around, and it’s also super easy to make.
