For this keto vanilla pudding recipe you will need:

  • 3 Egg Yolks
  • 1 cup Heavy Cream (full-fat)
  • 2 1/2 tablespoons Erythritol
  • 1 Vanilla Bean

🍮 Making Keto Vanilla Pudding 

Easily make the perfect keto pudding vanilla at home! Follow these steps:

Step 1

Place a saucepan over the stovetop on low heat. Pour the heavy cream into the pan.

Split the vanilla bean and take out the insides- add them to the cream and let it steep for 5 minutes.

Step 2

Remove from the heat. Then, take a mixing bowl and stir together the egg yolk and erythritol until they are light in color.

Step 3

Once the cream cooled (if you can put your finger in it without feeling too hot- it’s fine), pour about a quarter of the mixture into the egg yolks and mix to combine. Add another quarter, whisk, and then add the rest.

Step 4

Pour the cream and egg mixture back into the saucepan over low heat. Stir the mixture until you can see that it has become thicker.

Step 5

Pour the mixture through a strainer into a new bowl. Continue stirring it for 3-5 minutes.

Cover the bowl and place it in the fridge for 2.5 hours. Then, it’s ready to serve. Enjoy this amazing low carb vanilla pudding recipe!

Sweetener

To make this keto vanilla pudding sweet and tasty, I used Erythritol. It’s one of the most popular keto-friendly sweeteners and it’s a great substitute for sugar.

You may also use different types of sweeteners like Monkfruit. I used just 2.5 tablespoons of Erythritol for the entire recipe.

I don’t like my pudding too sweet. But, if you prefer it sweeter, feel free to add more sweetener.

Vanilla Bean

You can also use vanilla extract instead of vanilla beans, but the flavor will be much more intense if you use the beans.
