It’s an easy recipe, but it tastes so good- it’s hard to believe it’s keto! The toffee pudding is sticky, sweet, and rich- everything you want in a dessert.

And, it’s made with just a few simple ingredients that you probably already have in your pantry. So, what are you waiting for?

👨‍🍳 Keto Sticky Toffee Pudding Ingredients

To make this delicious keto sticky date pudding you will need these ingredients:

For The Cake

  • 3/4 cup Swerve Keto Sweetener
  • 1/2 cup Hot Water
  • 1 1/2 cups Almond Flour
  • 1/2 tablespoon Cocoa Powder
  • 3/4  teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 5 1/2 tablespoon Butter
  • 2 eggs (large)
  • 2 teaspoon Organic Yacon Syrup
  • 1/2 teaspoon Pure Vanilla Extract

For The Toffee Sauce

  • 1/4 cup Swerve Brown
  • 1/4 cup Allulose Sweetener
  • 6 1/2 tablespoon Butter
  • 1/2 cup full-fat Heavy Whipping Cream
  • 1/2 teaspoon Pure Vanilla Extract

⭐ Making Low Carb Sticky Date Pudding

Easily make this tasty low carb sticky toffee pudding! Fullow these simple steps:

Step 1

Preheat the oven to 350F (170C).

To bake the cake – you will need a 7 inch baking dish. A bigger, 8″ dish will also work. Line it with parchment paper. Grease it with a bit of cooking spray or olive oil.

Step 2

Place the Yacon syrup, vanilla extract, and hot water in a small bowl. Whisk everything.

Then, take another bowl, and whisk the almond flour with the baking soda, cocoa powder, and salt.

Step 3

Take a third bowl, and beat the butter and sweetener together. You want the texture to become fluffy – it will take between 2 and 3 minutes.

Add the eggs and beat until the ingredients are well combined. Then, add the almond flour mixture from the previous steps, and beat again.

Step 4

Add the Yacon mixture from the previous steps, and beat. The texture should be smooth.

Pour the mixture into the baking dish and smooth the top. 

Step 5

Set the pan into a larger baking dish, and fill the later with hot water (about 50-60% full).

Cover both with aluminum foil (as tight as possible- no air should be able to pass through). Bake for 35-40 minutes.

Then, let it cool for an hour.

Making The Sauce

To make the sauce- combine the sweeteners and the butter in a saucepan.

Place it over medium heat, and stir until everything melts and mixes. Once it boils, reduce the heat, and cook for 4 more minutes.

Add the vanilla extract and whipping cream. The mixture will start bubbling. Whisk and boil for 2 more minutes. Let it cool down, and then pour it over the cake.
