This recipe is easy to make, and you can have chicken nuggets that are crispy on the outside and juicy on the inside without all of the carbs.
I tried many different keto chicken nugget recipes. Only a few of them were good, and this is the best one I tried.
Chicken Nuggets Keto Ingredients
To make these almost zero carb chicken nuggets, you will need some basic and easy-to-find ingredients:
14 Oz chicken breast (400g) – cut into small-medium cubes
1/2 Scoop Whey Protein Powder – make sure it‘s unflavored unless you want some unique (or funny) tasting keto chicken bites.
2 Large Eggs
2 Cups pork rinds (crushed) – this ingredient is very popular and is used in many keto recipes. It allows you to add a crunchy element without the carbs.
1/4 Cup Parmesan cheese – grated.
1 teaspoon Garlic Salt
1 teaspoon Paprika – I recommend using smoked paprika to really bring out the flavor. Make sure you buy high-quality paprika – that was actually smoked, and not just treated with liquid smoke.
1 teaspoon Onion Powder
Pinch of Black pepper
Pinch of Chile Powder
How To Make Keto Chicken Bites?
This recipe is very simple, follow these steps, and you’ll have delicious keto chicken bites in no time!
Step 1: Preparing The Breading
To save time, first, preheat the oven to 400°F (205°C).
Then, add the pork rinds to a food processor and crush them. You can also just put them in a bag and crush them up with your hands.
The desired consistency is that of bread crumbs. Once the pork rinds have reached that point, add them to a bowl, and mix in the parmesan cheese, garlic powder, paprika (preferably smoked paprika), chili powder, and black pepper.
You want everything to be evenly mixed, so take the time to really mix it all together well.
Step 2: Preparing The Chicken And Coating
Dice the chicken into small, even pieces. Don’t make them too large or they won’t cook evenly. But also not too small, as they will end up being dry.
Then, add eggs to a bowl and whisk them till the yolks and whites combine.
Add the protein powder to a different bowl and set it aside. You can use any kind of protein powder, just make sure it is unflavored.
Step 3: Breading
Start by dipping the chicken nuggets into the protein powder. The coating should be even on both sides. Then, transfer the nuggets to the bowl with the eggs.
Once they are fully “wet”, move them into the bowl of breading. Make sure each piece is well coated with the breading mixture.
Step 4: Baking (The Fun Part!)
Transfer the chicken nuggets onto a baking sheet. Put it in the oven for about 15 minutes. Depending on your oven, they can be done in less time. Just get them out when they’re crispy.
To experience their flavor to the fullest, pair them with your favorite dipping sauce, and don’t forget to let them cool before serving. Yummy!
If you want to use your air fryer instead of the oven-
Preheat it to 400F (200C). Place the chicken nuggets in the air fryer basket. Make sure they are not too close to each other so they can cook evenly.
Air fry them for 8 minutes. I highly recommend flipping them halfway through so both sides get crispy.
Can You Freeze Keto Chicken Bites?
Yes, these chicken bites are freezer-friendly. I recommend vacuum sealing them or using freezer bags to prevent freezer burn.
Obviously, once you freeze them- you lose some of the crispiness, but these are still good reheated. If you freeze them close to the time they were made, they will retain more of their original juiciness.
Since this recipe is so easy and doesn’t take long to make- I recommend avoiding the freezer, and just making a fresh batch when you’re ready to eat them.
When just made, you can store these in the refrigerator for up to 3 or 4 days. They are the juiciest and crispy when eaten the day they are made.
How To Reheat Chicken Nuggets
If you want to reheat these keto chicken nuggets, without losing their crispiness, you have two options.
You can either put them in the oven at 350F (175C) for 10 minutes, or air frying them at 400F (200C) for a few minutes.
Almond Flour Chicken Nuggets
For this recipe, I am using crushed pork rinds in place of the wheat breading. But, you could use almond flour instead.
I think the taste is great with the pork rinds, but some might prefer the texture of chicken nuggets made with almond flour.
