  • 1 1/2 cups Coconut Flour
  • 2 cups Vanilla Frosting (I will explain how to make it)
  • 1/2 cup Almond Flour
  • 1/2 cup Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 2/3 cup Granulated Sweetener
  • 1/2 cup Butter (softened)
  • 6 Eggs (large)
  • 1 1/4 teaspoons Pure Vanilla Extract
  • 1/4 teaspoon Salt

Easily make low carb oreo cookies:

Step 1

Start by preheating your oven to 350°F (180°C) and lining two large baking trays with parchment paper.

Step 2

Take a large mixing bowl. Combine the coconut flour, almond flour, cocoa powder, baking soda, and salt. Mix well.

Step 3

Take another bowl and add the granulated sweetener, eggs, and butter. Mix well until smooth. Then, add the vanilla extract.

Step 4

Combine the wet and dry ingredients and mix well. Form 22 small balls of dough and place them on the two baking trays. Press down into a cookie shape.

Step 5

Bake for 10-12 minutes. Remove from the oven and let the cookies cool. Then, add the frosting (below I will explain how to make it) to half of them and top with the rest of the cookies.

How to make the frosting: You will need 3 cups of sugar-free powdered sugar, 1/2 cup of softened butter, 1 teaspoon of pure vanilla extract, and 1 tablespoon of milk. Take a large mixing bowl. Beat the powdered sugar and butter until well combined. Add the vanilla extract and milk, then mix again.
