To make this cauliflower potato salad you will need:

  • 2/3 cup Mayonnaise
  • 1 large Cauliflower (cut it into small-medium florets)
  • 2 Hard Boiled Eggs (chopped)
  • 1/3 cup Celery (diced)
  • 1/3 cup Onion (diced)
  • 3/4 tablespoon Apple Cider Vinegar
  • 3/4 tablespoon Dijon Mustard
  • 1/4 teaspoon Garlic Powder
  • 3/4 teaspoon Paprika
  • 1/4 tsp Black Pepper
  • Chives
  • 1/4 teaspoon Salt

Easily make this tasty keto cauliflower potato salad! Follow these steps:

Step 1

Place the cauliflower florets in a large bowl and add about 2.5 tablespoons of water.

Microwave for 5 minutes, then stir well, and microwave for another 5 minutes. Drain the liquids.

But, what if you miss the taste and texture of potatoes? Well, that’s where cauliflower comes in. Cauliflower is a great potato alternative and can be used in so many different recipes.

I won’t say it tastes exactly like potatoes, but it is a very good substitute. And, it’s much healthier for you. So, if you want to make a keto potato salad, then you will need to use cauliflower instead of potatoes.

I created this low carb potato salad recipe because I really wanted something to take to a picnic that everyone could enjoy – including me.

To make this low carb potato salad, you need 2/3 of a cup of mayonnaise. You can use store-bought mayo, but I recommend making your own. Here is an easy recipe.

I like eating this low carb cauliflower potato salad with a nice piece of keto bread. There are many keto bread recipes out there- but this recipe is my favorite.

It’s easy to make and always comes out great! Don’t get me wrong- you can eat this no carb potato salad as is- but it’s just so much better with bread.
