  • 1 1/2 cups Olive Oil / Avocado Oil
  • 2 Egg Yolks
  • 1 teaspoon Dijon Mustard

I just made mayonnaise with these few simple ingredients but used avocado oil, no vinegar and to give in longer shelf life, I fermented some beans and was able to use a tablespoon of the fermented brine. This makes it able to stay in the fridge up to 2 months. (Doesn’t affect the taste…) I put all the ingredients into a quart mason jar and gave it a minute to let the oil separate. Using an imulsifier and keeping it down on the bottom until it turned white and then lifted every so often. Oh, and before you refrigerate this it must stay on your counter for 6 hrs. for the fermentation to take place, then refrigerate. So, creamy and taste just like mayo.
