To make these keto apple pie cupcakes you will need:

For The Batter

  • 1oz (35g) Coconut Flour
  • 1.5 cups Apples (peeled, and then chopped)
  • 3.5oz (100g) Almond Flour
  • 3.9oz (110g) Cream Cheese
  • 1.95oz (55g) Monk Fruit or Erythritol
  • 2 tablespoons Ground Flax
  • 1 teaspoon Baking Powder
  • 1 1/2 teaspoon Ground Cinnamon
  • 3 Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 2 1/2 tablespoons Apple Cider Vinegar

🍏 Making Low Carb Apple Muffins 

Easily make these apple keto muffins at home! Follow these steps:

Step 1

Preheat your oven to 350F (175C). Then, blend and mix the eggs with the sweetener until frothy.

Step 2

Add the following wet ingredients: apple cider vinegar, cream cheese, and vanilla extract. Blend everything until well combined.

Step 3

Mix the dry ingredients (but leave the chopped apples for now aside) in another bowl. Add them to the egg mixture and blend together until batter forms. It should firm within 2 or 3 minutes.

Step 4

Mix in the chopped apples. Fill the muffin cups with the batter. Bake for 25-30 minutes.

Coconut Flour & Almond Flour

To make these keto apple muffins, I used both coconut flour and almond flour, but the main ingredient is almond flour.

I use it in so many of my keto recipes because it’s an excellent low-carb alternative to regular flour.

The coconut flour helps bind the ingredients together and also gives the muffins a nice texture.

Cream Cheese

Choose high-quality, and most importantly – full fat cream cheese for these apple keto muffins.

If you use lower fat cream cheese, your apple keto muffins will be less moist, and the taste will be compromised.

I see many people make this mistake. Remember- in 99% of cases- when a keto recipe calls for cream cheese, it means full fat.

Carbs

If you make 8 muffins, each will contain about 5g of net carbs. It’s not the lowest-carb muffin recipe, but when you taste these, you’ll know they’re worth the few extra carbs.

Eat them in moderation and enjoy. I like eating these keto apple pie muffins with coffee or tea, it’s the perfect combination.
