To make these low carb pumpkin spice donuts you will need:

For The Donuts

  • 1/3 cup Monk Fruit (or erythritol)
  • 1/2 cup Coconut Flour
  • 1 cup Mozzarella Cheese (shredded)
  • 1/4 cup Sour Cream (full-fat)
  • 1/4 cup Buttermilk
  • 1/2 cup Pumpkin Puree
  • 1 egg Yolk
  • 1 1/2 cups Almond Flour
  • 1 1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Xanthan Gum
  • 1/4 teaspoon Nutmeg (ground)
  • 1 Egg

For The Glaze

  • 1/3 cup Heavy Whipping Cream (full-fat)
  • 1 cup Confectioners Swerve
  • 2 1/2 tablespoons Buttermilk
  • 1/4 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Pure Vanilla Extract

🍩 Making Pumpkin Spice Keto Donuts

Follow this easy low carb pumpkin spice donuts recipe:

Step 1

Start by preheating the oven to 350F (175C) and greasing a donut pan.

Then, add to a small bowl : coconut flour, almond flour, monk fruit, baking powder & soda, salt, xantham gum, and nutmeg.

Whisk all the ingredients together and set aside.

Step 2

Add the pumpkin puree, butter milk, sour cream, egg, and egg yolk to a bowl. Whisk together.

Step 3

Put the mozzarella cheese in a bowl and microwave until it melts.

Then, use an electric mixer to beat the melted cheese with the wet mixture.

Once done, start slowly pouring and mixing the dry ingredients into the wet mixture.

Step 4

Create 1.5 or 2 inch diameter balls of dough and press into the donut pan. Bake for about 12-13 minutes.

Remove from the oven and let them cool for at least 10 minutes.

Step 5

While the donuts are cooling, we will make the pumpkin spice glaze. Simply combine all the glaze ingredients and mix well.

Monk Fruit

To make these pumpkin spice donuts sweet and tasty, I used monk fruit as the sweetener. I really like its taste, but you can also use your favorite sweetener instead.

Almond & Coconut Flour

These donuts are made with almond flour and coconut flour. The combination of both flours creates the perfect texture.

Using just one kind of flour will give you a much denser donut. Both of these flours are great for low carb baking.

I use them in so many of my recipes. You can buy them in most grocery stores or online. Or, you can grind your own if you have a food processor.

Xanthan Gum

I added a bit of xanthan gum to help bind the ingredients together. You don’t need much of it, and it really makes a difference in the texture of your pumpkin spice donuts.

If you don’t have xanthan gum on hand, you can just leave it out. I highly recommend buying some, though! I also use it in many of my recipes (for example- keto butter cookies and keto egg white bread).

The Glaze

Add Nuts On Top
