Almond Flour

To make these low carb butter cookies, I used almond flour as the main ingredient. Almond flour is a great gluten-free option for baking and gives the cookies a rich, nutty flavor.

I use it in many of my low-carb baking recipes. The texture this flour creates makes for a delicious cookie.

Xanthan Gum

I added a bit of Xanthan gum to these keto butter cookies to give them a little extra structure.

The xanthan gum helps to keep the cookies together and prevents them from crumbling too much after baking.

It also gives the cookies a nice chewiness that you don’t get with other low carb cookies.

The xanthan gum is a great addition to any keto-baking recipe and definitely adds a nice texture to these butter cookies.

Sweetener

You can use either erythritol or monk fruit for this recipe. Also, if you want to make the cookies sweeter- just add more of either of these sweeteners until you get the desired sweetness.

Just don’t go overboard or your cookies may turn out too sweet. That’s a mistake I’ve made before and it’s not pleasant.

Try Adding Different Extracts

I used vanilla extract to make these low carb butter cookies taste more like the real deal, but feel free to experiment with other extracts.

I think almond or coconut would be good too. You can even try adding cake batter extract to make these taste extra special.

Carbs

This recipe makes 22 cookies. Each one contains about 1g of net carbs, making it perfect for those on a keto diet.

Remember – carbs add up quickly, so eat these cookies in moderation. Take a cookie or two with a good cup of coffee for a sweet treat that won’t throw you out of ketosis.

If you start eating 20 of these a day- it’s going to be a problem.

I hope you liked my sugar free butter cookies recipe! It’s really a good alternative to the real thing, and it’s also low carb and keto friendly.

I am sure you will like it as much as I do. Make sure to check out other keto-friendly recipes on my blog, and if you have any questions, feel free to comment.
