For this keto almond cookies recipe you will need:

  • 2 Eggs
  • 2 cups Almond Flour
  • 3/4 cup Swerve Sweetener
  • 1/4 cup Butter (unsalted)
  • 1 1/4 teaspoon Almond Extract

Easily make low carb almond cookies at home! Follow this simple recipe:

Step 1

Preheat your over to 350F (175C). Then, using a hand mixer – beat the butter and sweeter together for about 1:30 minutes.

Step 2

Add the eggs- one at a time and mix until the mixture is smooth.

Step 3

Mix in the almond extract. Then, slowly start adding the almond flour and mixing until well combined.

Step 4

Scoop the cookie batter onto a sheet pan lined with parchment paper. Bake for about 15 minutes, or until the bottom of the cookies is browned.

If you google “keto cookies”, you will find hundreds of recipes. As you can probably guess- not all of them are worth your time.

I tried so many recipes over the past years. Some were excellent, some were not so good. If you are looking for a good keto cookie recipe- this is it.

This recipe is for almond cookies and it’s simple and delicious. The cookies are chewy and have a great almond flavor. They go really well
with a cup of coffee or tea.

Try Using Different Extracts

I made these low carb almond cookies with almond extract, but you can absolutely try using other extracts like vanilla, lemon, or orange.

Even cake batter extract would be interesting to try! All of these extracts would pair well with the almond flavor in these cookies.

Nowadays, there are so many extracts available that the possibilities are endless. You could even get creative and mix a few together.

For example, almond and vanilla extract would be a classic combination that would go great in these cookies. Or, you could try almond and lemon extract for a more unique flavor.
