These ingredients are needed to make the perfect keto pumpkin pancakes

  • 1/4 cup Pumpkin Puree
  • 3 Eggs
  • 1/2 cup Almond Flour
  • 1/2 teaspoon Pumpkin Spice
  • 3/4 teaspoon Cinnamon
  • 1/2 teaspoon Baking Powder
  • 2 tablespoons Monk Fruit

🥞 Making Keto Pumpkin Pancakes

Easily make the best keto pumpkin pancakes! Follow these steps:

Step 1

Add the almond flour, pumpkin spice, cinnamon, monk fruit, and baking powder to a medium bowl.

Whisk all the ingredients together until they’re combined.

Step 2

Add pumpkin puree and eggs and Whisk again until dough forms (it shouldn’t be very runny, but a liquid batter).

Step 3

Preheat a skillet over medium heat and grease with butter. Use a 1/3 measuring cup to scoop the batter into the skillet.

One of those is this keto pumpkin pancake recipe. It’s easy to make, tastes great, and has a lovely texture.

Plus, it’s perfect for fall! Add your favorite toppings, and you’ve got a delicious and healthy breakfast or snack.

Adjusting Sweetener

I found that 2 tablespoons of monk fruit sweetener are perfect for me, but you may want to start with 1 tablespoon and add more to taste.

You can use other keto-friendly sweeteners, but monk fruit sweetener is really one of my favorites.

Using Almond Flour

To make these no carb pumpkin pancakes, I used almond flour, which is a great low carb flour alternative to regular flour.

Almond flour is made from grinding up almonds and is a good source of healthy fats and fiber.

It’s used in so many keto and low carb recipes because it has a similar texture to regular flour, but without the carbs.

Some other recipes use coconut flour, which is also low in carbs but has a different texture. I find that almond flour works best for these pancakes.
