To make these low carb amaretti cookies you will need:

  • 3 Egg Whites
  • 7oz (200g) Almond Flour
  • 4.2oz (120g) Powdered Erythritol
  • 1/2 teaspoon Salt
  • 3/4 teaspoon Almond Extract
  • Powdered Erythritol (for dusting)

🍪 Making Keto Amaretti Cookies

Follow this easy keto amaretti cookies recipe:

Step 1

Line a baking sheet with parchment paper.

Then, add the almond flour, sweetener, and salt to a mixing bowl. Whisk them together until well combined.

Step 2

Take another bowl, and beat the egg whites using an electric mixer (until soft peaks form).

Step 3

Fold half or 3/4 of the egg whites onto the almond flour mixture. Fold them slowly until thick paste forms.

The number of egg whites needed may vary, depending on the texture and freshness of the almond flour.

Step 4

Mix in the almond extract. Avoid overmixing but make sure it is all blended together.

Step 5

Create 1 inch rounds and place them on the baking sheet. Let them rest for at least 1.5 hours. Then, preheat the oven to 350F (175C). Bake for about 12 minutes.

After removing them from the oven – let them cool for at least 20 minutes.

I used almond flour to make the keto amaretti cookies – it’s the perfect low carb flour for these cookies.

There are other flours like coconut flour, but to get the perfect texture and flavor you need almond flour.

I use it in so many of my recipes- and it never fails me. I really like the taste and texture almond flour can bring to recipes like these.

Powdered Erythritol

To keep these cookies low carb, I used powdered erythritol instead of sugar. It’s a great sugar-free sweetener that works well in keto-friendly desserts. You can also use powdered xylitol instead- both are great options!

Carbs

Each cookie contains 1.5g of net carbs. So, you can eat these low carb amaretti cookies in moderation and enjoy!

On keto, moderation is key. You can not eat a pound of “low carb cookies” and expect to stay in ketosis.
