      Easily make this carnivore friendly no bake cheesecake! Follow these steps

      Step 1

      Add the heavy cream to a stand mixer. Mix on medium-high until stiff peaks form. Set aside.

      Step 2

      Add the cream cheese and stevia to a large mixing bowl and mix well. Then, add the confectioners’ stevia, vanilla extract, and sour cream. Mix well.

      Step 3

      Fold the heavy cream into the cream cheese mixture. Do it slowly so the heavy cream won’t deflate!

      Step 4

      Add the mixture to a springform pan (I used a 9″ one). Cover with plastic wrap, and place in the refrigerator for at least 8 hours. Remove the springform pan rim, and serve. Enjoy! I recommend serving with whipped cream on top.

      1. Room Temperature Ingredients

      Make absolutely sure your cream cheese and sour cream are at room temperature before starting. Take them out of the fridge at least 2 hours before making the cheesecake.

      If the cream cheese is even slightly cold, you’ll end up with small lumps in your mixture that won’t smooth out no matter how much you mix.

      If you’re in a hurry, cut the cream cheese into small cubes – this will help it warm up faster. You can also place the wrapped cream cheese in a bowl of warm (not hot) water to speed up the process.

      2. Watch Those Peaks

      When whipping the heavy cream, pay close attention to the consistency. You want stiff peaks, but be careful not to over whip.
