      Start by preheating the oven to 350°F and lining a baking sheet with parchment paper.

      Mix the meat and salt (also add the seasonings if using) in a bowl.

      Slice the cheese into 8 cubes and divide the meat into 8 portions.

      Step 4

      Form a ball from each portion and make a well in the center. Insert the cheese inside and press the meat around to cover it completely.

      1. Choose The Right Meat

      When picking ground beef for this recipe, go for a mix that’s not too lean. An 80/20 blend (80% lean meat, 20% fat) works well.

      This amount of fat helps keep the meatballs juicy and flavorful. If you use meat that’s too lean, your meatballs might end up dry. You can also experiment with mixing different meats.

      For example, you can use half beef and half pork for a slightly different flavor. Just make sure the total amount of meat stays the same as in the recipe.

      2. Resting and Serving

      After you take the meatballs out of the oven, let them rest for about 5-10 minutes. This step is important because it allows the juices to redistribute throughout the meat.

      If you cut into them right away, a lot of the juicy goodness will run out onto your plate. Definitely not what we want.

      During this resting time, the internal temperature of the meatballs will continue to rise a bit, which helps ensure they’re fully cooked.

      When you’re ready to serve, you have lots of options. I recommend serving them with my carnivore dipping sauce.

      Can I use ground turkey instead of beef?

      Beef is really the best choice. Ground turkey has much less fat, which means the meatballs will likely come out dry and won’t hold together as well.

      The fat in beef is important – it keeps the meatballs juicy and helps them stay together while cooking.

      Why did my cheese leak out during cooking?

      This usually happens when the meat wasn’t sealed properly around the cheese. Make sure you’re creating a deep enough well in the meat ball, placing the cheese cube in the center, and then completely sealing all edges.
