This recipe has become a staple in my kitchen, and I make a fresh batch every week. It’s perfect for dipping your meat in, spreading on burger patties, or using as a base for other carnivore friendly sauces.

No Special Equipment: All you need is a hand mixer and a bowl. No fancy food processors or blenders required. 

Perfect Consistency: The recipe creates a mayo that’s thick enough to spread but soft enough to dip. It has that perfect traditional mayonnaise texture that makes it satisfying to use!

✨ Recipe Ingredients

  • 1 whole Egg  (separated)
  • 1/2 cup of Any Animal Fat (read note 1) – this is my favorite (amazon link)
  • 1 1/2 teaspoons Mustard (read note 2)
  • 1/4 teaspoon Salt
  • 1 teaspoon Lemon juice  (read note 2)

Note1: I recommend using lard / butter / rendered chicken fat / rendered duck fat. If you use tallow, the mayo will come out much harder – so I don’t recommend it.

Note2: While mustard and lemon are technically not part of the carnivore diet, we are only use about a 1 teaspoon. You can omit these ingredients.

👨‍🍳 How To Make

Easily make keto mayonnaise at home. Follow these steps:

Step 1

Separate the egg yolk from the egg white. Place the egg yolk in a medium-sized bowl. Add lemon juice, mustard, and salt. Blend the mixture using a hand mixer until frothy.

Step 2

Place the animal fat into a microwave-safe container and heat it until it melts completely.

Step 3

Slowly add the melted fat into the bowl with the yolks while continuously blending the mixture.

It’s important to blend the mixture throughout the whole process to ensure everything combines well. Take your time – it took me 7 minutes to finish.

Step 4

Pour the egg white on top of the blended mixture and incorporate it for 15-20 seconds.

Step 5

Place the mixture in the refrigerator for 3-4 hours to allow it to firm up. After that, you can enjoy this amazing carnivore mayo!

💡Tips

1. Choosing the Right Fat

Lard, butter, chicken fat, and duck fat are excellent options that provide a smooth, creamy texture.

Each fat will impart a slightly different taste, so feel free to experiment and find your favorite. Avoid using tallow, as it can make your mayo too hard and difficult to spread.

2. The Slow Pour is Key

When adding the melted animal fat, pour it in a very thin, steady stream while continuously mixing.

Think of it like adding a thread of liquid – that’s how slow you want to go. If you add the fat too quickly, the mayo won’t emulsify properly and might end up separating.

It should take about 5-7 minutes to add all the fat. Your arm might get tired from holding the mixer, but this slow process is what creates that thick, creamy texture.

Can I use any type of animal fat?

Yes, you can use any liquid animal fat that’s suitable for the carnivore diet. Duck fat, beef tallow, lard, bacon fat, or even chicken fat will work.

    I made this today with bacon grease. Texture and taste were excellent! Because the bacon grease was already salty, I would cut back on the salt next time. Also, if the egg is at room temp, that will help the egg and fat to emulsify, which in turn allows the fat to be poured in more quickly. It only took 4 minutes total for mine to come together.
