    • 1 Lemon (zest and juice) (read note)
    • 3 cloves Garlic (crushed) (read note)
    • 1/2 teaspoon Salt

    • Optional: Parsley (omit for strict carnivore)
    • You can also add other seasonings you like (I recommend cumin)

      Start by preheating the oven to 300°F (150°C) and spraying a large piece of foil with cooking spray (or brush it with melted butter).

      Step 2

      In a mixing bowl, toss the beef cubes with the garlic, lemon zest, seasonings, and a few tablespoons of lemon juice.

      Transfer the seasoned beef cubes to the prepared foil. Fold the foil into a well-sealed packet.

      Place the foil packet in the preheated oven and cook for 3 hours.

      Remove the packet from the oven and let the meat rest inside the foil for at least 20 minutes before opening and serving.

      1. Don’t Skip the Resting Time

      The 20 minute resting time after cooking is super important. When you take the foil packet out of the oven, it might be tempting to open it right away, but don’t!

      During these 20 minutes, the meat continues cooking slowly in its own heat and all the juices redistribute throughout the meat.

      If you cut into it too soon, all those flavorful juices will run out onto your plate instead of staying in the meat. Think of it like letting a steak rest – same idea here. 

      2. Get Your Foil Right

      Double layer your foil to prevent any tears or leaks during cooking. Tear off two pieces of foil that are each about 4-5 inches longer than what you think you need. This extra length makes it easier to fold and seal the packet properly.

      When laying out the foil, make sure the shiny side is facing inward – this helps reflect heat back onto the meat. Create a proper seal by folding the edges over several times and crimping them tightly. 

      3. Create Some Space

      Don’t pack the meat too tightly in the foil packet. Leave some room for the steam to circulate – this helps cook the meat evenly.

      Spread the meat cubes out in a single layer if possible. If you need to make multiple packets because you have a lot of meat, that’s better than overcrowding one packet.

      Yes, you can use frozen beef, but you’ll need to thaw it completely first. Never use frozen beef directly in the foil packet because it won’t cook evenly.
