2 pounds beef (cut into cubes. You can use beef ribs, chuck etc)
1Lemon (zest and juice) (read note)
3 cloves Garlic (crushed) (read note)
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
Optional: Parsley (omit for strict carnivore)
You can also add other seasonings you like (I recommend cumin)
Instructions
Start by preheating the oven to 300°F (150°C) and spraying a large piece of foil with cooking spray (or brush it with melted butter).
In a mixing bowl, toss the beef cubes with the garlic, lemon zest, seasonings, and a few tablespoons of lemon juice.
Transfer the seasoned beef cubes to the prepared foil. Fold the foil into a well-sealed packet.
Place the foil packet in the preheated oven and cook for 3 hours.
Remove the packet from the oven and let the meat rest inside the foil for at least 20 minutes before opening and serving. I recommend draining all the liquids and rendered fat.
Notes
Note: We are using lemon and garlic for flavor. The amount of these ingredients that the meat actually absorbs is negligible. If you are on a 100% strict carnivore diet, you can omit these ingredients and use beef stock instead.
