For this keto strawberry cheesecake recipe you will need:

For The Filling

  • 3 large Eggs
  • 32 oz (900g) Cream Cheese (full fat)
  • 1 1/4 cup  Monk Fruit – Allulose Blend
  • 3/4 teaspoon Pure Vanilla extract
  • 3/4 tablespoon Fresh Lemon juice

For The Crust

  • 1/3 cup Butter (melted)
  • 2 cups Almond Flour
  • 3/4 teaspoon Pure Vanilla Extract
  • 2 1/2 tablespoons Monk Fruit – Allulose Blend

For The Topping

  • 1/2 cup Keto Strawberry Jam
  • 1 lb (450g) Fresh strawberries (1/2 lb chopped and 1/2 lb cut into halves)
  • 3/4 tablespoon Fresh Lemon juice

🍓 Making Keto Strawberry Cheesecake 

This keto strawberry cheesecake is super easy to make at home! Just follow these steps:

Step 1

Start by preheating your oven to 350F (175C) and lining the bottom of an 8-inch or 9-inch springform pan with parchment paper.

Then, make the crust by mixing together the melted butter, almond flour, sweetener, and vanilla in a bowl. Press the dough into the prepared pan and bake for 10 minutes. Allow it to cool for at least 15 minutes.

Step 2

To make the filling, place the cream cheese and sweetener in a mixing bowl. Use a hand mixer on medium speed to beat the ingredients together until they are light and fluffy.

Then, beat in the eggs (only one at a time for the best results). And to finish, mix in the lemon juice and vanilla extract. The hand mixer should work at low speed for this entire process.

Step 3

Pour this filling over the crust and use a spatula to smooth it out. Bake it for about 50 minutes. The center should be set but slightly jiggly.

Step 4

Remove from the oven and allow the cheesecake to cool for at least 30 minutes. Then, place it in the refrigerator for at least 3 hours.

Step 5

To make the topping, in a saucepan – combine the chopped strawberries with the jam and lemon juice. Place it over medium heat and simmer for 8-10 minutes. Mash the sauce.

Step 6

Add in the halved strawberries and heat the mixture for 2 additional minutes. Then, remove the sauce from the heat and allow it to cool for at leat 15 minutes.

Step 7
