These keto nutter butter cookies are so easy to make. You will need the following ingredients:

For The Dough

4 large Egg Yolks

1/2 cup (80g) Confectioners Swerve

6oz (170g) Natural Peanut Butter

1/4 cup (28g) blanched Almond Flour

1.5 teaspoon (6g) Vanilla Extract

For The Filling

2 tablespoons (30g) Natural Peanut Butter

1 Tablespoon unsweetened Almond Milk

1 tablespoon (10g) Confectioners Swerve 

🍪 How To Make Keto Nutter Butter Cookies

Step 1

Start by preheating the oven to 350F (175C).

Add egg yolks, natural peanut butter, blanched almond flour, vanilla extract, and confectioners swerve to a bowl.

Step 2

Mix until a dough starts to form. Once it does, use your hands to shape it into a ball.

Step 3

Scoop dough and use your hands to form the dough into cookies.

Step 4

Place the cookies on a baking sheet lined with parchment paper and bake for 8-10 minutes.

Let them set and cool down on the tray for at least one hour.

Step 5

To make the filling, add the filling ingredients into a small bowl. Start with the peanut butter and Confectioners Swerve.

Then, add almond milk- half a tablespoon at a time. Mix until the filling is smooth and has a creamy consistency.

Step 6

Add -1.5 teaspoons of filling to the bottom of each cookie, and add another cookie on top of it. Enjoy!
