To make these tasty keto friendly ice cream bars you will need:
- 2 pints Low Carb Ice Cream
- 1 cup Almond Flour
- 1/2 cup Cocoa Powder
- 5 large Eggs
- 1/4 cup + 2 1/2 tablespoons Low Carb Chocolate Chips
- 3/4 cup +2 1/2 tablespoons Butter
- 1 cup Allulose Sweetener
- 3/4 teaspoon Baking Powder
- 1 tablespoon Pure Vanilla Extract
🌟 Making Low Carb Ice Cream Bars
Making these keto friendly ice cream bars at home is easy and fun! Follow these steps:
Step 1
Line two 8-inch square pans with parchment paper.
Then, add the dry ingredients from the list to a mixing bowl- and mix well.
Step 2
Take another bowl (make sure it’s microwave safe), and place the butter and chocolate chips inside.
Microwave until they’re melted. Stir, and then whisk in eggs and vanilla.
Step 3
Add the dry ingredients to the wet mixture and mix well. Divide the brownie batter between the two pans. Make it thin by spreading it out.
Then, place a piece of parchment paper over each pan and press gently.
Step 4
Bake in the oven for 13-15 minutes. Remove the top paper from both and let them cool for at least 20 minutes.
Step 5
Let your keto ice cream thaw for about 15 minutes and then scoop it and spread it on the first brownie. Top it with the second brownie.
Freeze it for 25 minutes, and then slice(About 8 or 9 bars) and serve.

There are other brands of low carb chocolate chips out there, but Lily’s are my favorite.
