And one day, I decided to create my own recipe, which is now my go-to recipe whenever I crave something sweet and chocolatey.
These keto chocolate chip cookie bars are so tasty, chocolatey and easy to make. And they are also low in carbs, which makes them perfect for a keto diet.
I like eating them with a good cup of coffee in the morning or as a snack in the afternoon.

To make these keto cookie bars you will need:
- 1 cup Low Carb Chocolate Chips
- 1 1/2 cups Almond Flour
- 1/3 cup Monk Fruit or Erythritol
- 1 large Egg
- 1/2 cup Butter (unsalted)
- 1 teaspoon Vanilla Extract
- 3/4 teaspoon Ground Cinnamon
- 3/4 teaspoon Baking Soda
- 3/4 teaspoon Salt
🌟 Making Keto Chocolate Chip Cookie Bars
These low carb chocolate chip cookie bars are so easy to make! Follow these simple steps:
Step 1
Preheat your oven to 350F (175C) and line a 8×8 or 9×9 baking pan with parchment paper.
Then, place the butter in the bowl of a stand mixer and beat until it’s fluffy.
Add sweetener and vanilla extract and beat again until creamy. To finish, add the egg and beat once again until mixed.
Step 2
Add almond flour, salt, baking soda, and cinnamon to the mixture and beat until combined.
Then, fold in the chocolate chips.
Step 3
Place the dough in the lined baking pan and press it evenly.
You can add some chocolate chips on top for extra flavor and decoration.
Step 4
Bake in the oven for about 23-25 minutes. The edges should turn golden brown.
Allow the keto chocolate chip bars to cool down for at least 45 minutes before serving. Enjoy!
Low Carb Chocolate Chips
To make these keto chocolate chip cookie bars, you need to use low carb chocolate chips.
I like to use Lily’s brand because they are sweetened with keto-friendly sweeteners, and they melt and taste just like regular chocolate chips!
There are some other brands that also offer keto chocolate chips, but Lily’s are my favorite.
Before buying any chocolate chips for this recipe, check out the label and make sure they are indeed low carb and keto-friendly.
Some brands of chocolate chips have added sugar or other ingredients that are not keto-friendly.
Freezing
I don’t recommend freezing these low carb chocolate chip cookie bars because their texture changes when they are frozen.
They become more dense and chewy. But, if you must freeze them, make sure to wrap them tightly in plastic wrap or aluminum foil and place them in a freezer bag.
When you are ready to enjoy them, let them thaw on the counter for about 2 hours or place them in the microwave for about 30 seconds.
Sweeteners
To make these keto cookie bars, you can use monk fruit or erythritol sweeteners.
Either one will work great and taste great. I like to use a combination of both.
Some products on the market that are a blend of these two are very popular, so feel free to use them as well.
