For this keto egg noodles recipe you will need:

  • 4 large Egg Yolks
  • 2 cups shredded Mozzarella Cheese
  • 1/2 cup Lupin Flour
  • 1/4 teaspoon Salt

🌟 Making Low Carb Egg Noodles 

Easily make homemade keto egg noodles! Follow these simple steps:

Step 1

Place the egg yolks and lupin flour in a food processor. Combine and mix until the mixture is uniform – dry crumbs will form.

Step 2

Place the mozzarella cheese in a microwave-safe bowl. Microwave in 20-second intervals until melted.

Then, combine the mozzarella with the flour mixture. Use the food processor to mix it again until the dough forms.

Step 3

Form the dough into a ball. Then, place it between 2 pieces of parchment paper. Use a rolling pinto to flatten the dough until it is quite thin, about 1/16 inch thick.

Step 4

Remove the top parchment paper. Cut the dough into narrow strips, and place them on a baking sheet lined with parchment paper.

Step 5

Place in the fridge for at least 6 hours. The egg noddles will become stiff once they’ve been left to dry.

Step 6

And now for the easy part. To cook the keto egg noodles, bring a pot of water to boil, and drop the pasta in. Let it cook for about 40-50 seconds.

Mozzarella Cheese

I made these keto friendly egg noodles with mozzarella cheese. In my opinion- it really adds a unique flavor and texture to the noodles.

I didn’t try this low carb egg noodles recipe with other cheeses, but mixing mozzarella with some other cheese like parmesan or cheddar could be nice too.

Lupin Flour

Lupin flour is keto friendly as it’s low in carbs. It’s made from lupin beans and it allows you to create pasta that has a similar texture and taste to real pasta.

The protein in the lupin flour works like gluten works in regular flour. That’s why I chose to make these no carb egg noodles with this flour.

There are many sugar free egg noodles recipes online. Some of them use other low carb ingredients like almond flour or psyllium husk powder.
