1. Room Temperature Ingredients
Take your feta cheese and Greek yogurt out of the fridge about 30 minutes before making the dip.
When they’re at room temperature, they blend much more smoothly and create that perfectly creamy texture we’re looking for. Cold ingredients tend to stay chunky and won’t whip up as nicely.
If you’re in a hurry, you can place the sealed containers in warm (not hot) water for about 10 minutes to speed up the process.
2. Pat Your Feta Dry
Before adding the feta to your blender, pat it dry with paper towels. Excess moisture can make your dip too runny and dilute the flavors.
If your feta comes in brine, make sure to drain it well and pat it extra dry – those few drops of brine can really change the consistency of your dip.
3. Start Slow, Then Speed Up
When blending, start at a low speed for about 30 seconds to break down the feta into smaller pieces. Then gradually increase to high speed.
