      Start by preheating the oven to 400°F and lining a large baking sheet with parchment paper. Brush it with melted butter.

      Step 2

      Whisk the eggs in a large bowl, then stir in the shredded cheese, cream cheese, and the canned tuna (make sure you drain it REALLY well).

      Shape the patties and place them on the prepared baking sheet. I made 10 patties.

      Bake in the preheated oven for 8-10 minutes, then flip and bake for 5 more minutes until golden brown. Enjoy!

      1. Drain That Tuna Well!

      This is super important – you need to drain the tuna really, really well. First, open the can and drain off the liquid. Then, press down on the tuna with the can lid (while holding it over the sink) to squeeze out even more liquid.

      After that, put the tuna in a clean kitchen towel or several layers of paper towels and squeeze gently but firmly.

      You want it as dry as possible because extra moisture will make your patties fall apart or become soggy. 

      2. Room Temperature Ingredients 

      Take your cream cheese and eggs out of the fridge about 30 minutes before you start cooking. When these ingredients are at room temperature, they mix together much more smoothly.

      Cold cream cheese will leave little lumps in your mixture, which can make the patties uneven. Room temperature eggs also blend better with the other ingredients. 

      3. Let Them Cool

      After taking the patties out of the oven, let them rest on the baking sheet for about 3-5 minutes. They’re delicate when hot and will firm up as they cool slightly.

      Don’t try to move them to a plate right away, or they might break. Once they’ve rested, they’ll be much easier to handle and will hold their shape better.

      Absolutely! You can experiment with different cheese combinations. Just make sure to use cheese that melts well. Mozzarella works great and gives a nice stretch.

      Swiss cheese adds a nutty flavor. Pepper jack can add some spice. Provolone is another good option.

      Avoid very soft cheeses like brie or very hard aged cheeses as they won’t give you the right texture.

      Why didn’t my patties get crispy?

      Your oven might not be hot enough – make sure it’s fully preheated to 400°F before putting the patties in.

      Also, the baking sheet might be overcrowded – leave space between patties for heat to circulate. Another reason can be that your patties might be too thick.
