    • 1 pound Cooked Bacon (cut into small pieces)
    • 2 pounds Ground Beef (80/20%)
    • 12 oz Cheddar cheese (shredded) – I recommend this one (amazon)
    • 8 eggs (large)
    • 1 clove Garlic (minced)
    • 1/2 teaspoon Onion Powder
    • 1 cup Heavy Whipping Cream
    • 1/2 teaspoon Salt
    • 1/4 teaspoon Black Pepper

    Note: Note: I add onion powder and garlic just to add to the taste. These are not carnivore-friendly, so if you follow a 100% strict diet, simply omit them. Otherwise, enjoy!

      Follow this easy recipe:

      Step 1

      Start by preheating the oven to 350°F and greasing a casserole pan with melted butter (I used a 9×13 one).

      Step 2

      Place a large skillet over medium-high heat. Add the ground beef, onion powder, and minced garlic. Stir and cook until the meat is browned – about 7 minutes. Once done, drain the excess grease.

      Step 3

      Transfer everything to the casserole pan. Add the bacon on top and stir until well combined. Note: You can also skip adding the bacon at this point. And add it on top once you complete step 5.

      Step 4

      In a medium bowl, whisk the eggs, cream, pepper, and salt until combined. Then, stir in 3/4 of the cheddar cheese.

      Step 5

      Pour the mixture over the ground beef in the dish and top with the remaining cheddar cheese.

      Step 6

      Bake in the oven for about 30 minutes or until the top is golden brown. I recommend adding more bacon on top. Enjoy!

      1. Drain The Grease

      Make sure to drain the ground beef really well after cooking it. Too much leftover fat from cooking can make your casserole greasy and soggy.

      The best way to do this is to tilt your pan slightly and use a spoon to remove the excess fat, or carefully pour it off into a heat-safe container.

      Don’t skip this step – the casserole already has plenty of fat from the cream, cheese, and eggs.

      2. Resting

      Let the casserole rest for at least 10-15 minutes after taking it out of the oven. During this time, the eggs will continue to set up, making it easier to cut clean slices. If you cut into it too soon, it might be too soft and fall apart.

      Can I use different types of cheese?

      Yes, you can experiment with different types of cheese! While regular cheddar works great, you can try other varieties that melt well. Some good options are Colby Jack, Monterey Jack, or a mixture of cheeses.

      Just make sure to use cheese that melts smoothly – some harder cheeses like aged cheddar might become grainy when melted. 

      My cheese got too brown on top – what did I do wrong?

      If your cheese is getting too brown on top before the casserole is fully cooked, your oven temperature might be too high , or the casserole might be too close to the heating element.

      Next time, position the rack in the middle of the oven, and if you notice the top browning too quickly, loosely cover it with foil for the remainder of the cooking time. 

      What size casserole dish should I use?

      A 9×13 inch casserole dish works best for this recipe. This size allows the casserole to be thick enough to be satisfying but not so thick that it won’t cook through properly.

        This was delicious. Most of the carnivore casseroles I’ve tried are really dry. This was not dry. I will definitely try this again.
