Today I will share a very special recipe with you – my carnivore noodles! This recipe only requires 4 ingredients and it’s super easy! I always looked for pasta alternatives that I could eat as a carnivore, and at some point- I decided to create my own version of them!

I like these carnivore egg noodles so much because they are a breeze to make, and taste delicious. Sometimes I even add them to my carnivore soups and I must say that it’s the perfect combination!

These noodles are not only tasty but also super healthy! Eggs are the main ingredient here. You can make and eat these noodles every week! No problem at all.

✨ Recipe Ingredients

To make these tasty carnivore noodles you will need these ingredients:

  • 3 Eggs
  • 3 tablespoons Pork Rinds (finely ground) – Use these pork rinds (amazon link) for the best results.
  • 4 1/2 tablespoons Cream Cheese
  • 1 1/2 tablespoon Grated Parmesan

👨‍🍳 How To Make

Follow these steps and make the best carnivore noodles

Step 1

Preheat your oven to 350F. Then, place all the ingredients in a blender. Blend until everything is well mixed and combined.

Step 2

Place a silicon mat on a baking sheet. Pour the mixture onto the mat and spread it thinly. Bake for about 10 minutes.

Step 3

Allow it to cool for at least 20 minutes. Then, peel the sheet from the baking mat carefully. Roll it like a jelly roll. Use a knife to slice it thinly. Enjoy these tasty carnivore noodles!

💡Tips

1. Blend Longer Than You Think

To have a smooth puree, I really blend everything together well, so no tiny pork rind bits remain. This ensures everything emulsifies together seamlessly.

2. Room Temperature Ingredients 

I recommend letting the eggs, cream cheese and Parmesan come up to room temp before blending everything. When the ingredients are cold (straight from the fridge)- the blend can be grainy or with a curdled texture. 10-20 minutes is more than enough.

3. Super Fine Pork Rinds

The pork rinds should be ground into a very fine powder (I use a high powdered blender or food processor and pulse until it is flour like in texture). If the pork rind pieces are coarse (too large)- they won’t incorporate smoothly into the noodle dough.

4. Use a Sharp Knife

Make sure to use a (really) sharp knife to slice the noodle roll. Make sure it is non-serrated. You can also chill it in the fridge a bit and it will help make clean and precise cuts through the roll.

I slice with a gentle sawing motion and avoid pressing down too hard (to not quish the noodle roll). Make sure to wipe the knife clean between slices. It will help prevent sticking and the cuts will be cleaner.

  2. Do you use these like regular noodles? Meaning boil them until cooked? For some thing like beef stroganoff I would need to boil them or just heat them?
