✨ Recipe Ingredients

To make the carnivore ice cream cake you will need:

  • Carnivore Ice Cream (here is my recipe)
  • 6.5 oz (180g) Whey Protein Powder
  • 4 teaspoons Cream of Tartar
  • 5 Eggs
  • 2 teaspoons Baking Soda
  • 1 teaspoon Glycine
  • 14oz (400g) Ricotta Cheese
  • 4.5 oz (130g) Butter
  • 1 teaspoon Ground Cardamom (omit if strict carnivore)
  • 2 teaspoons Ground Cinnamon (omit if strict carnivore)
  • 2 teaspoons Ground Cloves (omit if strict carnivore)
  • 1 teaspoon Nutmeg (omit if strict carnivore)
  • 3 teaspoons Ground Ginger (omit if strict carnivore)
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Beef Gelatin Powder
  • Optional: carnivore whipped cream for frosting.

Important: as I mentioned, there are seasonings you can omit if following a strict carnivore diet. In the photos here you can see 2 versions of this ice cream cake: with and without the seasonings.

👨‍🍳 How To Make

Follow these steps to make this amazing carnivore diet ice cream cake:

Step 1

Start by preheating the oven to 325°F (165°C). Then, mix whey protein powder with cream of tartar, baking soda, and glycine. Set aside.

Step 2

In a stand mixer (you can also use a hand mixer), mix ricotta cheese with butter until well combined. 

Step 3

Add 5 eggs – one by one. Take your time, add one egg, wait for everything to be mixed, then add the next egg.

Step 4

Add ground cardamom, ground cinnamon, ground cloves, nutmeg, ground ginger, baking powder, and beef gelatin powder. Mix well.

Step 5

Add the dry ingredients (from step 1). Mix lightly with a spatula until everything is well combined (important!).

Step 6

Pour the mixture into a silicone loaf pan. Place on the baking sheet and bake for 40-45 minutes.

Step 7

Remove from the oven. Use a sharp and long knife to slice the loaf in half lengthwise.

Step 8

Spoon carnivore ice cream onto one part, and top with the second. Wrap with cling wrap and place in the refrigerator overnight. Then you can slice and enjoy this amazing carnivore ice cream cake!

1. Achieve the Perfect Texture

To create a light and fluffy cake texture, it’s important to mix the ricotta cheese and butter until they are well combined. Use a stand mixer or a hand mixer to achieve a smooth, homogeneous mixture.

When adding the dry ingredients to the wet mixture, fold them in gently with a spatula but make sure everything is very well combined – it should take a few minutes.

2. Refrigeration and Serving Tips

Refrigerating the cake overnight is important for allowing the flavors to meld and the structure to firm up. Place the wrapped cake on a flat surface in your refrigerator to avoid any shifting.

Before serving, let the cake sit at room temperature for about 10-15 minutes to make slicing easier. Use a sharp knife for clean slices, and wipe the knife between cuts to maintain neat edges.
