Carnivore Tortillas

A few weeks ago I decided to try and make my own version of the perfect carnivore tortillas. I already tried a few recipes online, and the result was not good to say the least. So I knew I had to “invent” something myself. And it worked!

My recipe is super easy, and once you taste these tortillas- I bet you will make them over and over again. I make these for my kids regularly now, and they are so much healthier than store bought tortillas full of carbs.

The best part about this recipe is that only 4 ingredients (plus water) are needed, Yes, that’s it! I used eggs, pork rinds, butter, salt and water.

These delicious tortillas are pan fried and they actually hold together really well. They mimic the texture of traditional tortillas, and I enjoy them so much!

✨ Recipe Ingredients

For this carnivore tortilla recipe you will need the following ingredients:

  • 6 large Eggs
  • 5oz (140g) Pork Rinds (Use these pork rinds– Amazon link)
  • 2 cups Water
  • 1 1/4 tablespoon Butter
  • 1 1/2 teaspoon Salt

👨‍🍳 How To Make

To make the perfect carnivore tortilla follow these steps:

Step 1

Grind the pork rings in a food processor until they are a fine powder. Then, place them in a mixing bowl and add eggs, water, 1 tablespoon of butter, and salt. Mix and blend until smooth.

Step 2

Add a tablespoon of butter to a 9″ cooking pan and heat it over low heat.

Add about 1/4 cup of batter to the pan and in a spiral pattern from the center outward until it covers the entire pan surface. Make sure the heat is not too high or the batter will start burning.

Step 3

Cook it on one side for about 6 minutes, and then flip. Let it cook on the other side for about 4 minutes.

Step 4

Once done, set it aside and allow it to cool. Add more butter to the pan and continue cooking the remaining batter. Enjoy these tasty carnivore tortillas!

💡Tips

1. Grinding Pork Rinds Into a Fine Powder

To get the right tortilla texture, it’s important to grind the pork rinds into a fine powder. If the pork rind pieces are too big or inconsistently ground you may end up with unpleasant chewy bits throughout the tortilla (happened to me once).

I recommend using a high powered blender (a food processor will work too) and processing until fine powder. Stop and scrape down the sides as needed. I stop when it looks like cake flour – ultra fine powder.

2. Using Low – Medium Heat

The tortilla batter is pretty delicate- if the heat is too high it can burn. So make sure to use low-medium heat. It will allow them to set slowly as they puff up with air pockets. I recommend using a nonstick pan.

After you pour down the batter, if you notice the temp is too high- IMMEDIATELY turn the heat down as needed. It should slowly sizzle gently and not change color right away.

3. Allowing Tortillas to Cool Completely

Freshly cooked hot tortillas can get soggy quickly. I recommend allowing them to cool completely. After cooking, place each tortilla on a wire track and make sure air can circulate under and around them.

4. Adding More Flavors

Try adding herbs or spices to the batter for extra flavor (only if you are not on a 100% strict carnivore diet of course). Garlic powder, onion powder or pinch of cayenne pepper are great ideas. You can also add a herby touch by adding finely chopped fresh herbs like parsley or cilantro.

Variations

Here are 5 carnivore friendly filling variations to place inside the pork rind tortilla wrap:

1. The Classic – Ground beef, seasoned with salt & pepper, and a bit of tallow. A simple, tasty filling that can’t be beat.

2. The Italian – Thinly sliced prosciutto and salami, layered with fresh mozzarella pearls and basil leaves.

3. The Breakfast – Scrambled eggs with bacon crumbles and cheddar cheese. 

4. The Philly – Thinly sliced beef topped with melted provolone. A cheesesteak twist for the carnivore.

5. The Chili – Beef chili made with ground beef, chili powder, cumin, oregano, and just a touch of tomato paste for texture.

    I have made this twice now. First time as the tortillas, then the second time I baked the entire batch on a sheet pan to use as layers for an enchilada casserole (20 minutes at 350). It’s definitely more of a pancake like consistency BUT I didn’t mind that part especially in the casserole. Thank you so much for sharing your recipe!
