      Melt the heavy whipping cream and cheese in a pan on the stove top (low heat!).

      Step 2

      Once melted, mix and spoon into molds (any silicone candie mold).

      Place in the freezer for 30 minutes, then transfer to the refrigerator. Enjoy!

      1. Melt It Right

      Don’t rush the melting process – this is the most important step. Keep the heat on low and stir constantly.

      If the heat is too high, the cheese and cream can separate or burn, ruining the whole batch.

      You’ll know it’s ready when the mixture is completely smooth with no lumps, and has a shiny, caramel-like appearance. This usually takes about 5-7 minutes. If you see any small cheese chunks, keep stirring and they will eventually melt.

      2. Watch Those Bubbles

      While melting, your mixture might start to bubble. This is normal, but you want gentle bubbles around the edges, not a rolling boil.

      If it starts bubbling too much, remove the pan from heat for about 30 seconds while continuing to stir, then return it to the heat.

      This prevents the mixture from becoming grainy or separating. The texture should be like thick caramel sauce when it’s ready.

      1. Richard, I do like your recipes, some are in my weekly rotation even. I was super excited to get this one in my email today! We are a family of Ketovore and Carnivore.
        However, I wish your nutrition information was a lot more accurate! This recipe is not “zero carb carnivore fudge.”
        If this makes 2 servings then 2 oz. of the Gjetost Cheese contains 26 gms of carbs. Heavy whipping cream contains carbs as well. While it may be listed on the label as zero, because manufacturers are allowed to do so if it’s under 1gm, it’s actually 0.4gm per tablespoon. So roughly 3.5 tablespoons (50gms) is another 1.4 carbs. So one 2oz serving clocks in at approximately 27.4 gms of carbs!

        I would love to be wrong about this so I could try this out! Please correct me if I am.

        • Thank you for your comment. I checked and indeed, the Gjetost cheese contains carbs, but these are the natural sugars in the cheese. The carnivore diet is not about avoiding carbs (although it comes naturally with this way of eating), but about avoiding plants and anything that isn’t animal-based. I did fix the zero carb claim (sorry about that), but this is still a carnivore recipe. Thank you!
