👨🍳 How To Make
Follow these steps:
Step 1
Place these ingredients in a mixing bowl: cream cheese, egg yolks, beef gelatin, egg white powder, melted butter, and white vinegar.
Use a hand mixer to combine everything together (start slow and then mix on high). Make sure there are no clumps (it should be mixed very well and look smooth).
Step 2
Whisk the egg whites (I used a hand mixer). After about 2 minutes, add the baking soda and mix again until stiff peaks form.
Step 3
Combine the mixture from step 1 and the egg white mixture. Mix very well! It should be fluffy.
Step 4
Take a silicone burger bun pan. Brush it with tallow or butter. Place the mixture into the pans, leaving a bit of space at the top so they can expand. For the classic look, you can add sesame seeds on top (avoid if you are following a strict carnivore diet).
Step 5
💡Tips
1. Fill the Bun Pans the Right Level
When filling the burger bun pans with the batter, it’s important to leave some space at the top to allow for expansion during baking. If you overfill the pans, the buns may overflow and lose their shape.
2. Mix the Ingredients Thoroughly
When combining the cream cheese mixture with the whipped egg whites, it’s important to mix them together very well to ensure a homogeneous batter.
If the ingredients are not properly incorporated, you may end up with uneven buns that have pockets of cream cheese or egg white. Definitely not what we are looking for texture wise.

FAQ
1. Why do we need beef gelatin in the recipe?
Beef gelatin is a key ingredient in these buns. It helps bind everything together and gives the buns a bread-like texture. Without it, the buns might fall apart or be too crumbly. The gelatin also adds some protein and helps make the buns chewy, just like regular bread.
If you’re following a strict carnivore diet, beef gelatin is a great way to add structure to baked goods without using any plant-based ingredients.
2. Can I toast these buns?
Yes, you can definitely toast these buns! Toasting can make them even tastier and give them a nice crispy texture. You can use a regular toaster, but be careful as these buns might be a bit more delicate than regular bread.
You could also try toasting them in a pan with a little butter, which can make them extra delicious.

Hello, I’d like to make these tomorrow but I have a question regarding the gelatin. On the list of ingredients you name it “Unflavored Gelatin “. However, under the instructions it says Beef Gelatin. Can you please clarify which one is needed for the recipe. Thank you!
Unflavored beef gelatin.
My buns flattened after they came out of the oven but looked perfect in the oven. What did I do wrong? Tips please…
Mine did the same. I’m going to keep working at it, trying different things like letting eggs come to room temp and mixing the eg white mix into the other batter very gently with a fork. I will post if I figure this out.
Great buns but mine fell also. Was wondering if a higher altitude can be an issue? Not even sure what it needs to keep them from falling. More gelatin?
Love the texture and flavor and will make again. Thank you so much for creating and sharing your work.
I’m new (only a couple of weeks in) to our carnivore life style, but this is the best “bread” that I’ve come across. Currently making a double batch now, looking forward to smash burgers for lunch tomorrow!
