      Cook bacon until crispy, then crumble into small pieces. Meanwhile, preheat your oven to 350°F (175°C).

      Beat 5 eggs in a bowl until smooth.

      Add the shredded cheese into the mixing bowl. Fold it into the eggs, add salt, and then mix again.

      Fill the cupcake baking pan (6 slots) with the egg-cheese mixture, – leave about 1/4 inch space at the top. Sprinkle the crumbled crispy bacon evenly over each muffin.

      Bake for 18-20 minutes, then broil for about a minute to get a golden top and ensure the bacon is extra crispy.

      When you beat the eggs, beat them until you see lots of tiny bubbles – this helps create that light, fluffy texture we’re looking for. Cold eggs straight from the fridge tend to make denser, heavier muffins.

      2. The Cooling Step

      These muffins need that full 30 minute cooling time. They’re still cooking slightly from residual heat, and this time allows them to set properly.

      If you try to remove them too soon, they might fall apart or stick to the pan. They’ll also be easier to remove from the pan once they’ve cooled and contracted slightly. Place the muffin tin on a wire rack for even cooling.

       Can I double the recipe?

      Yes, you can easily double or triple this recipe. Just make sure you have enough muffin tins. The ingredients double perfectly – use 10 eggs, 8 oz cheese, and 12 slices of bacon. The cooking time stays the same even when you’re making more.

      If you’re baking multiple tins at once, rotate their positions in the oven halfway through baking for even cooking.

      Can I use different types of cheese?

      Yes, you can use any hard cheese that melts well. Cheddar, mozzarella, provolone, or a mix of these work great.
