Today I want to share an amazing one-pan meal that combines everything you love about cheeseburgers into a hearty casserole.
This carnivore skillet cheeseburger casserole is perfect for anyone following a carnivore diet or simply looking for a satisfying low carb dinner option.
The best thing about this recipe is how it transforms simple ingredients into a rich, filling meal.
With ground beef as the base, crispy bacon bits scattered throughout, and two types of cheese creating a creamy, melty texture, this dish delivers all the flavors of a classic cheeseburger without the bun.
I particularly love how this meal comes together in just one skillet, making cleanup a breeze.
This casserole is also great for meal prep since it reheats well and stays delicious for several days in the fridge. Whether you’re cooking for yourself or feeding a family, this recipe is sure to become a regular in your dinner rotation.
👍 Why You’ll Love This Recipe
One-Pan Wonder: Everything cooks in a single skillet, which means less cleanup time and less stress in the kitchen.
Rich and Creamy: The combination of cream cheese and cheddar creates an incredibly smooth and rich sauce that coats every bite of meat.
The cream cheese melts into the broth, making a velvety sauce that keeps the ground beef moist and flavorful.
Perfect Meal Prep: This casserole reheats beautifully and stays delicious for several days in the fridge.
You can make a big batch on Sunday and have satisfying carnivore meals ready for the week ahead.
✨ Recipe Ingredients
- 5 slices Bacon (chopped into small pieces)
- 1 cup Cheddar Cheese (shredded) – I recommend this one (amazon)
- 1 pound Ground Beef

- 1/2 teaspoon Onion Powder (read note)
- 1/2 teaspoon Garlic Powder (read note)

👨🍳 How To Make
Follow these steps:
Step 1
Heat a large skillet over medium heat, and spray it with cooking spray or grease it with tallow.
Step 2
Cook the chopped bacon until crispy, remove it from the skillet, and set it aside for now.
Step 3
Drain all the bacon grease, except for about 1 tablespoon. Add the ground beef to the skillet and brown the meat. Drain off any excess grease.
Step 4
Add the cream cheese, broth, and spices to the browned ground beef. Stir until the cream cheese melts and the sauce forms.
Step 5
Reduce the heat to low. Top the ground beef mixture with the cooked bacon and cheddar cheese.
Step 6
💡Tips
1. Temperature
Start with medium heat for browning the meat, but make sure to lower it when you add the cream cheese and broth. If the heat is too high when you add these ingredients, the cream cheese can separate and become grainy instead of smooth and creamy.
When you’re melting the final layer of cheese on top, keep the heat on low and cover the pan – this creates a “mini oven” effect that melts the cheese evenly without burning the bottom of the casserole.
2. Drain the Meat
After cooking the ground beef, drain off the excess fat but don’t go overboard. You want to remove enough fat so the dish isn’t greasy, but leave a little bit in there for flavor.
An easy way to drain the meat is to push it to one side of the skillet and tilt the pan slightly, letting the fat pool on the empty side. Then use a spoon to remove most of the fat, leaving just a little bit behind.
3. Resting Time
Once the cheese on top has melted, let the casserole rest for about 5 minutes before serving. This resting time lets the sauce thicken up a bit and helps all the flavors come together.
Plus, it makes it easier to serve – if you try to portion it out immediately, the sauce might be too runny and the cheese too stringy to handle easily.
