Xanthan Gum

To make these keto oatmeal cookies, I used xanthan gum to help bind the ingredients together.

It also creates a chewy texture, similar to oatmeal cookies made with gluten.

If you don’t have xanthan gum on hand, you can skip it, but your cookies will be a little crumblier.

I definitely recommend buying some though, because it’s very useful in low-carb and gluten-free baking.

Keto & Cookies

There are so many keto cookie recipes online. I tried many of them over the past few years. Some were good, some were not so good. And some were just down right inedible.

But this keto oatmeal cookies recipe is really good! Try it and you’ll see.

Each cookie contains about 1.5g of net carbs. Eat them in moderation and enjoy!

I like eating these cookies with coffee or tee- in my opinion, it’s the perfect combination.

Sweeteners

I recommend using the Monk Fruit Allulose blend because it gives the perfect taste and texture to these cookies.

You could also use erythritol or swerve, but the texture will be a little different.
