Many people recommend eating organ meat on the keto diet. In my opinion and from my experience- it’s indeed very important. Keto organ meats are not only nutrient dense – but are also delicious (when prepared right). And on top of that – most organ meats are super cheap. So if you are looking for more verity on the keto diet – and don’t want to spend hundreds of dollars a month on expensive cuts of meat – defiantly try organs meat !

This time – I will show you how to easily prepare beef spinal cord keto crackers. The recipe is super easy, and these keto crackers are delicious. Many will find that when buying spinal cord – it doesn’t look too appealing at first glance. But actually – beef spinal cord is super tender and crispy – when prepared right. Its texture is pretty unique – I think most people will really like it. You can never know until you taste it !

Ingredients
  • 2 pounds Beef spinal cord
  • Smoked salt
  • Smoked paprika
Instructions
  • Place a sheet of aluminum foil on the baking tray, and on top - one layer of baking paper. To prevent the crackers from sticking later on - apply a bit of olive oil / melted butter.

  • Place the beef spinal cords, and season with salt or paprika (the seasonings are optional of course. I like my beef spinal cord keto crackers only seasoned with salt).
  • Pre-heat the oven to ~400F (200C). Cook for 30-40 minutes - until the spinal cords are browned and become "crispy".
  • Enjoy your delicious and crispy keto beef spinal cord crackers.

Where to buy beef spinal cord?

In some countries – organ meats are very popular, and all butcher shops sell them. While in other countries – organ meats are rarer, and can be bought at smaller, or ethnic butcher shops. Some countries don’t allow selling beef spinal cords because of the mad cow disease risk (Bovine Spongiform Encephalopathy – BSE). So, to sum things up – try looking for beef spinal cords at smaller butcher shops. If you can’t find them raw – there is nothing wrong with buying frozen beef spinal cord – it will be cheaper as well. Compared to other organ meats like beef liver – spinal cords are fairly expensive. But overall – they are a great option for keto crackers. And when paired with homemade keto mayonnaise (and maybe small amounts of homeade ketchup) – it’s a really amazing dish that you can eat every week.

Beef spinal cord – the best option for keto crackers

On KetoandEat, you can find different recipes for keto crackers / crisps – most of them contain cheese. In my opinion – the best option for making them – is not from cheese, but from beef spinal cords. That’s the “carnivore” option, and I think it’s tastier than the cheese keto crisps alternatives. You can also try to put grated cheese on the spinal cords to enhance the flavour – but in my opinion, it’s really not necessary. Beef spinal cords have a unique taste and texture. Not all people like this special texture – but for me personally – it’s great!
