While some “keto experts” claim that eating nose-to-tail is super important, others say it’s really not necessary. In my opinion – nose-to-tail, which basically means—eating organ meat, is the healthiest choice. Also, organ meats are cheap and super tasty. I think that many people avoid them just because they don’t really know how to prepare them right. And if that’s not enough – many keto organ meat recipes require long preparation times, cleaning, etc..
The “average” beef testicles recipe (rocky mountain oysters) requires you to clean them by removing the outer layer, then fry it on the pan. Well, in my opinion – these recipes are not very good. Not only do you waste time, but the results are not as tasty as they could be. So – I created my own beef testicles recipe. It’s 100% keto friendly. Super tasty, healthy and cheap. Everything is done in the oven – and there are no preparations. No cleaning, no removing layers. This is, without a doubt – the best rocky mountain oysters recipe you will find.
I do want to mention that after preparing the cooked cow balls in the oven – you can fry them in butter and get the classic “rocky mountain oysters”. They will be soft, tender, and crispy. It’s a great idea, because the beef testicles themselves are pretty low in fat. By frying them in butter – you can drastically change that. Never use vegetable oils – even not olive oil. These oils are very rich in linoleic acid – which is the main driver of metabolic dysfunction in our time. Only use oils like butter, ghee, beef fat, etc..
- Beef Testicles
- Smoked salt & Your Favorite meat seasoning
- Place the beef testicles as-is (no need to remove the outer layer or any other part) on a baking paper.
- Add smoked salt and your favourite seasoning. I like using natural-smoked salt like the one in the picture below - there are many companies that offer similar products.
- Wrap everything with aluminum foil (including the baking paper)- make it as air tight as possible. Use at least 2 layers to make sure it won't burst. I recommend using thick aluminum foil (at least 16 microns).
- Heat the oven to 350f (~180 Celsius). Cook for 1.5-2 hours.
- That's all ! Open the aluminum foil and enjoy the tender and delicious beef testicles.

Where To Buy Beef Testicles
It really depends on which country you live in. In some countries – organs meats are very popular, and therefore beef testicles can be bought fresh at any butcher. While in other countries – finding fresh or frozen beef testicles will be almost impossible. From my experience – avoid fancy butcher shops and try the smaller, local butchers. There, you have better chances of finding beef testicles. I know that in some countries you can find mainly frozen testicles – the taste and texture is pretty much the same, so that’s not a problem.
My recipe, which I post on this page, is done in the oven – slow cooked for 1.5-2 hours. You can, as I mentioned – follow other popular recipes – and fry the testicles right away in the pan. But that will require you to clean and prepare them first. And also, in my opinion – the taste and texture are worse than when cooked in the oven. Because you cook the rocky mountain oysters in the oven for so long – the outer layer of the beef testicles – gets soft, like gelatin. It really adds a unique flavor to the dish. Many recipes tell you to remove this layer before cooking. A big mistaqke.
