      1. The Right Way to Mix

      Mix your ingredients thoroughly but don’t overdo it. Start by whisking the egg separately first, then add your cheese and seasonings.

      Mix until everything is well combined and you don’t see any separate egg parts, but stop there. 

      2. Choosing Your Cheese

      The type of cheese you use really matters. For the mozzarella, use low moisture, full fat shredded cheese.

      The pre shredded kind works fine, but if you shred your own, make sure to use the larger holes on your grater – if it’s too finely shredded, it can melt too quickly and make the flatbread greasy.

      For the parmesan, use freshly grated if possible – it melts better than the shelf stable kind in the green container.

      If you can only find pre-grated parmesan, that’s okay, but you might need to add a little extra to get the same flavor impact.

      My flatbread turned out too greasy. What went wrong?

      This usually happens from using cheese with too much moisture. Make sure you’re using low moisture mozzarella cheese.

      If you’re shredding your own cheese, let it sit on paper towels for a few minutes to absorb any excess moisture. Also, make sure you’re not using too much cheese – follow the measurements exactly.

        Best ever. A simple, tasty and easily customizable recipe. Mine came out perfectly. I added bacon, jalapeno and feta. This is easier than making fathead dough pizzas with all the melting of cheese and such. I will add olives and sundried tomatoes next.
