Carnivore Beef Muffins

The best part? You only need a few ingredients to make these savory muffins. Ground beef forms the base, creating a cup like shape that holds delicious fillings.

You can choose between a creamy cheese mixture or a crispy bacon and cheese combo.  Both options are full of flavor and perfect for the carnivore diet.

This recipe is great for people who don’t have much time to cook but still want to eat well (and in this case- REALLY well).

You can make these muffins ahead of time and reheat them later, which is handy for busy days.

      👨‍🍳 How To Make

Follow this easy recipe to make these carnivore beef muffins:

      Step 1

Preheat oven to 300°F. Season the bottom of two muffin tin cups with steak seasoning. Press about 3 oz of ground beef into each cup, forming a “beef receptacle”. Season the top of the beef.

      Step 2

Place the muffin tin on a sheet tray and bake for about 20 minutes. While baking, prepare the fillings.

      Step 3

For the cream cheese filling: Mix the cream cheese with half of the shredded cheddar cheese in a bowl until well combined.

      Step 4

For the bacon-cheese filling: Cook diced bacon in a pan over medium-high heat until crispy. Drain excess fat and let cool slightly.

Mix the cooked bacon with half of the shredded cheddar cheese.

      Step 5

Remove beef cups from the oven and drain excess grease. Fill one beef cup with the cream cheese mixture and one with the bacon-cheese mixture.

You can also sprinkle additional cheese on top and return to the oven for 1-2 minutes to melt. Serve and enjoy!

      💡Tips

      1. Watch The Cooking Time Carefully

The cooking time for these beef muffins can vary depending on your oven and the exact size of your muffin tin, so it’s important to keep an eye on them.

Start checking them after about 15 minutes of cooking. You’re looking for the beef to be cooked through but still juicy.

If you have a meat thermometer, the internal temperature should reach 160°F (71°C) for food safety.

The outside of the muffins should be browned, but not burnt. If they’re browning too quickly but aren’t cooked through, you can cover the muffin tin loosely with aluminum foil.

This will allow them to continue cooking without getting too dark on top.

      2. Store And Reheat Properly

Once the muffins have cooled completely, you can store them in an airtight container in the refrigerator for up to 3-4 days. If you want to keep them longer, they freeze well too.

Wrap each muffin individually in plastic wrap or aluminum foil, then place them in a freezer bag.

They’ll keep in the freezer for about 2-3 months. When you’re ready to eat them, thaw frozen muffins in the refrigerator overnight and then reheat in the oven for about 5 minutes.

      FAQ

      1. What kind of ground beef should I use?

For the best results, use 80/20 ground beef (that’s 80% lean meat, 20% fat). If you use leaner beef, like 90/10, the muffins might end up a bit dry. The fat helps keep them juicy and adds flavor.

      2. Can I use different cheese?

Absolutely! While cheddar works great, you can try mozzarella, pepper jack, or provolone. Just make sure it’s a cheese that melts well. Avoid very soft cheeses or very hard cheeses like parmesan as your main cheese choice.
