Separate the egg yolk from the egg white. Place the egg yolk in a medium-sized bowl. Add lemon juice, mustard, and salt. Blend the mixture using a hand mixer until frothy.
Place the animal fat into a microwave-safe container and heat it until it melts completely.
Slowly add the melted fat into the bowl with the yolks while continuously blending the mixture. It’s important to blend the mixture throughout the whole process to ensure everything combines well. Take your time – it took me 7 minutes to finish.
Pour the egg white on top of the blended mixture and incorporate it for 15-20 seconds.
Place the mixture in the refrigerator for 3-4 hours to allow it to firm up. After that, you can enjoy this amazing carnivore mayo!
Notes
Note1: I recommend using lard / butter / rendered chicken fat / rendered duck fat. If you use tallow, the mayo will come out much harder – so I don’t recommend it.Note2: While mustard and lemon are technically not part of the carnivore diet, we are only use about a 1 teaspoon. You can omit these ingredients.
