Craving a sweet treat but don’t want to stray from your carnivore diet? Look no further than these amazing carnivore cookie bars! With a rich, buttery base and a hint of warm spices, these bars will satisfy your sweet tooth without compromising your dietary goals.
My recipe is simple and straightforward, using just a handful of carefully selected ingredients that align with the carnivore way of eating. Nonfat milk powder and milk protein powder form the foundation, while a blend of aromatic spices adds depth and complexity to the flavor profile.
Don’t worry if you’re following a strict carnivore diet – simply omit the spices and add a touch of vanilla extract instead.
The secret to achieving the perfect texture lies in the browning process. By slowly cooking the mixture over low heat, you’ll create a rich, caramelized flavor that pairs beautifully with the creamy, melt-in-your-mouth consistency of the bars. Let’s get started and make these carnivore bars!

👨🍳 How To Make
Easily make these delicious carnivore bars! Follow these steps:
Step 1
Place the nonfat milk powder in a bowl. Add cinnamon, ginger, cloves, allspice, nutmeg, and cardamom. Mix very well.
Step 2
Place the butter in a pan and melt it over low heat. Add the powder (from step 1) and immediately start mixing and stirring until well combined.
Step 3
Brown the mixture (the same way you would brown butter). Keep the heat very low and stir from time to time. It will take about 40-45 minutes.
Step 4
Meanwhile, in a small bowl, mix the milk protein powder with the glycine.
Step 5
Pour the mixture from the pan into a small glass container, mix well with the milk protein powder & glycine mixture, and flatten the final mixture. Cover and put in the fridge to set for at least 1.5 hours.
Step 6
💡Tips
1. Brown the Butter Mixture Slowly and Carefully
Browning the butter mixture is an important step in creating the rich, nutty flavor that makes these carnivore cookie bars so delicious. However, it’s important to do this slowly and carefully to avoid burning the mixture.
Keep the heat very low and stir the mixture frequently, scraping the bottom and sides of the pan to prevent sticking and burning. The browning process should take about 40-45 minutes, so be patient and don’t rush it.
You’ll know the mixture is ready when it has turned a deep golden brown color and has a nutty aroma.
2. Allow the Mixture to Set Properly
After pouring the final mixture into a glass container and flattening it out, it’s important to allow it to set properly in the fridge. This will help the cookie bars firm up and develop their final texture. Cover the container with a lid or plastic wrap to prevent any odors from the fridge from absorbing into the mixture.
Allow the mixture to set for at least 1.5 hours, or longer if possible, to ensure that it is fully chilled and firm. If you try to slice the cookie bars too soon, they may be too soft and fall apart.
