    • 1/4 teaspoon Salt

      Follow this easy recipe:

      Step 1

      Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper. Grease it lightly with melted butter.

      Step 2

      Separate the egg whites from the yolks.

      Step 3

      Using a mixer, beat the egg whites until foamy.

      Step 4

      In a separate bowl, mix the cream cheese, egg yolks, and salt with a blender until smooth. Gradually add the beaten egg whites to the mixture and fold gently. We want it to be airy and fluffy.

      Step 5

      Spoon six portions of the mixture onto the lined baking sheet, shaping them into discs. Bake for 27-30 minutes until golden brown. Remove from the oven and let them cool for 10 minutes. Enjoy!

      💡Tips

      1. Folding Technique

      When combining the beaten egg whites with the yolk and cream cheese mixture, fold gently to maintain as much air as possible in the batter. Use a large, wide spatula or a large spoon. 

      Cut down through the center of the mixture, scrape along the bottom of the bowl, and lift the mixture up and over onto itself. Rotate the bowl a quarter turn and repeat.

      Do this just until the mixtures are combined – you should still see some streaks of egg white.

      Overmixing will deflate the batter and result in flatter, denser cloud bread. It’s better to have a few small lumps than to lose all the air you’ve worked to incorporate.

      2. Cooling and Storing

      The way you cool and store your cloud bread can significantly affect its texture. After removing from the oven, let the cloud bread cool on the baking sheet for about 3 minutes. Then, carefully transfer to a wire rack to cool completely.

      This prevents condensation from forming underneath, which can make them soggy. Once completely cool, store them in an airtight container, placing a piece of parchment paper between each piece to prevent sticking.

      No, I don’t recommend using low-fat cream cheese for this recipe. Full fat cream cheese is important because it helps give the cloud bread its structure and taste.

      Low fat versions contain more water and less fat, which can make your cloud bread turn out flat and rubbery.

      2. Why did my cloud bread turn out flat?

      Flat cloud bread usually happens because of how you handled the egg whites. The most common reason is not beating the egg whites enough – they need to be really foamy and form stiff peaks.

      Another reason could be mixing too roughly when you combine the egg whites with the cream cheese mixture.
