      💡Tips

      1. Pat Them Dry First

Always pat your chicken thighs completely dry with paper towels before seasoning them. This might seem like an extra step, but it makes a huge difference in how crispy your skin gets.

When chicken skin has moisture on it, it creates steam in the oven instead of directly crisping up.

Take an extra 30 seconds to thoroughly dry each thigh, paying special attention to crevices where the skin folds. If you’re cooking a larger batch, you might need several paper towels. The drier the skin before it goes into the oven, the crispier it will be when it comes out.

      2. Season Under the Skin

Don’t just season the top of the skin – gently lift the skin and sprinkle some of your seasonings directly onto the meat underneath. This creates layers of flavor instead of just having seasoned skin with bland meat underneath.

      3. Don’t Crowd the Pan

Leave space between each chicken thigh on the baking sheet. When chicken pieces touch or overlap, they steam each other instead of roasting properly. This prevents the skin from getting crispy all around.

A good rule is to leave at least half an inch between each piece. If you’re making a large batch, it’s better to use two baking sheets rather than crowding one. =

      Frequently Asked Questions

Can I use boneless chicken thighs instead?

Yes, you can use boneless chicken thighs, but you’ll need to adjust the cooking time. Boneless thighs typically cook faster than bone-in thighs, usually taking about 15-18 minutes instead of 20-25 minutes.

Keep in mind that boneless thighs won’t be quite as flavorful as bone-in thighs since bones add flavor during cooking.
