      Follow this easy recipe:

      Step 1

      In a medium bowl, combine the grated mild cheese, 2 teaspoons of pork rind crumbs, and salt. Then, stir in the egg whites and mix well.

      Step 2

      Form small balls and place them on a tray.

      Step 3

      In another bowl, combine the 1/2 cup pork rind crumbs and parmesan cheese. Roll each ball in this coating.

      Step 4

      Place a skillet over medium-high heat and add oil. Once hot, add the balls and cook until golden brown.

      Step 5

      Place them on paper towels, let them cool slightly, then serve and enjoy!

      1. The Egg Whites

      The stiff egg whites are super important for this recipe – they’re what holds everything together. When beating them, start with room temperature eggs (leave them out for about 30 minutes before starting).

      Keep beating until you can turn the bowl upside down and the whites don’t fall out.  If you see any yellow bits in your whites, even tiny ones, start over because the yolk will prevent them from getting stiff.

      Also, make sure your bowl is completely clean and dry – any grease or water will ruin the egg whites.

      2. Frying The Cheese Balls

      Don’t overcrowd the pan when frying – leave enough space between each ball so they’re not touching. This helps them get evenly crispy all around.

      Use tongs or a slotted spoon to turn them gently. They only need about 2-3 minutes per side, but keep watching them. If some balls are cooking faster than others, rotate their positions in the pan.

      Yes, mozzarella works great in this recipe! It’s actually one of the best choices because it melts really well and gives you that perfect stretchy texture inside. Just make sure to use the low-moisture mozzarella, not the fresh kind that comes in water.

      Fresh mozzarella has too much moisture and can make your balls fall apart. If you’re using block mozzarella, grate it yourself – pre-shredded mozzarella often has additives that aren’t carnivore-friendly and doesn’t melt as nicely.

      2. Why did my cheese balls fall apart while frying?

      First, check if your egg whites were beaten stiff enough – they should form peaks that don’t fall over when you lift the beater.

      Also, the mixture might have been too warm – try chilling the formed balls in the fridge for 15-20 minutes before coating and frying them.
