- 1/2 pound Boneless Beef Short ribs – thinly sliced in long strips
Marinade
- 2 tablespoons Worcestershire Sauce (read note)
- 1 tablespoon Ground Black Pepper
- 3/4 teaspoon Garlic Powder (read note)
- 3/4 teaspoon Onion Powder (read note)
- 1 teaspoon Paprika (read note)
- 1 1/2 teaspoon Salt (I recommend this smoked salt– amazon link)
Note: While these ingredients are technically not part of the carnivore diet, we are only using them in small amounts for added flavor. We are washing most of it just before dehydrating the meat. For those who are not following a 100% strict carnivore diet, it shouldn’t be a problem.

Mix together all the marinade ingredients in a medium mixing bowl.
Step 2
Place the thinly sliced meat in a plastic bag. Add the marinade, toss to coat well, and place in the refrigerator for at least 6 hours.
Step 3
Set the air fryer to the Dehydrate setting. Adjust the temperature to 150°F (65°C) and set the timer for 4-5 hours.
Step 4
Remove the beef from the marinade and strain off any excess liquid. Place each slice of beef in the air fryer, making sure they are not overlapping.

1. Arrange the Beef in a Single Layer
When placing the marinated beef strips in the air fryer, make sure they are not overlapping. This allows the hot air to circulate evenly around each piece, ensuring that the jerky dries consistently. If necessary, cook the beef in 2 batches to avoid overcrowding.
2. Strain Excess Marinade
Before placing the marinated beef in the air fryer, make sure to remove any excess liquid. This step is important to ensure that the jerky dries properly and doesn’t end up too moist or soggy.
Simply strain the beef strips and discard the leftover marinade. This way the beef jerky will be almost carb free too.

Instructions

- Start checking the beef jerky after 4 hours. If the texture is too tender, continue air frying until the desired texture is achieved. Once done, remove from the air fryer and enjoy your homemade short ribs beef jerky! I recommend slicing the jerky into cubes.
