My keto butter pecan ice cream recipe is very easy. Just follow these simple steps:
Place the pecans in a Ziploc bag, and crush them up using a rolling pin or similar object.
Set a pan over medium-low heat. Add the butter and allow it to melt.
Once the pan is hot, add the crushed pecans and confectioners swerve sweetener. Also, add a pinch of salt.
Using a spatula – mix everything well. The mixture should start caramelizing soon enough.
Continue to cook until the mixture turns a dark amber color. Then, remove from the heat and allow 20 minutes to cool down.
Add the heavy cream and vanilla extract to the mason jar. Then, add the seeds from 1/4 of a vanilla bean.
Break up your butter pecan mixture into smaller chunks and add them to the mason jar as well.
Then, add allulose.
Tighten the lid on the mason jar containing all of the keto butter pecan ice cream.
Shake until the cream has doubled in size. It shouldn’t take more than a minute or two.
