Meat Layer
1 tablespoon Olive Oil
1 pound (0.5kg) 80/20 or 85/15 ground beef
1/4 cup Diced Celery
1 clove minced Garlic
1/4 cup diced Red Onion
1/2 cup Keto Marinara Sauce
1 tablespoon Black Pepper
1 tablespoon Salt
Cheese Layer
8 oz (250g) Ricotta Cheese
1 cup shredded Mozzarella Cheese,
1/2 cup grated Parmesan Cheese
2 Eggs (lightly beaten)
1 tablespoon Italian Seasoning
1/2 tablespoon minced Garlic
1/2 tablespoon Garlic Powder
1/2 tablespoon Black Pepper
⏲️ How To Make Low Carb Skillet Lasagna?
This keto skillet lasagna is very easy to make:
Step 1: Preparing The Ground Beef
Heat a skillet over medium-high heat and add oil. Brown the ground beef and add celery, onion, and garlic. Cook for about 6-7 minutes.
Step 2: Adding Sauce
Add the marinara sauce (make sure it’s keto-friendly), salt, and pepper to the pan. Reduce the heat and let it simmer. Stir it every now and then.
Step 3: Preparing The Cheese
Take a large bowl and mix the ricotta with the mozzarella (use half of it), parmesan, eggs, Italian seasoning, garlic, and pepper. Then spread it over the meat.
Add the remaining mozzarella cheese on top. Cook for about 12 minutes.
Step 4: Oven (Last Step)
Place the skillet in the oven for about 3 minutes letting the top layer brown. Make sure the skillet is oven-safe!

Tips And Tricks
Choosing Ground Meat For This Lasagna
When making this skillet keto lasagna, it’s important to choose the right ground meat. I recommend using ground beef which is not too lean – 80/20 or 85/15.
If you buy low fat ground beef, your lasagna will be dry. No one wants a dry lasagna! The higher fat content will also help to keep this dish moist and flavorful.
You can also try and use ground lamb meat (or mix some of it in with the ground beef).
I love the flavor that lamb adds to this lasagna. If you do use ground lamb, I recommend using a leaner ground lamb meat – 90/10.
Adding Special Cheese
Many of you already know how much I like adding Gorgonzola (or blue cheese) to my recipes (recently I used it in my keto mexican pizza)
If you have never tried it, Gorgonzola is a very strong cheese with a sharp, pungent flavor. A little bit of this cheese goes a long way.
It’s the perfect cheese to add to recipes where you want that special flavor.
Try adding Gorgonzola to your skillet lasagna. I think you will be surprised at how well it goes with the other flavors in the dish.
If you can’t find this specific cheese, any other blue cheese will work just as well.
Using Cottage Cheese Instead of Ricotta
You can also replace the Ricotta cheese with cottage cheese. It changes the flavors a bit. Some people will like this version while others might not. It all depends on your preferences.
