For this keto hot pocket recipe you will need:

3 1/2 cups Mozzarella Cheese (for keto hot pocket dough)

1/2 cup Mozzarella (for filling)

1 1/2 cups Almond Flour

2 Eggs

1 teaspoon Baking Powder

Pepperoni

1/4 cup Keto Pizza Sauce (or no sugar-added tomato sauce)

1 tablespoon Water

🌟 How To Make Low Carb Hot Pockets

These keto hot pockets are very easy to make. Just follow these steps:

Step 1

Set and preheat the oven to 350F (175C).

Microwave 3 1/2 cups of mozzarella for about 2 minutes or until all the cheese has melted. Stir it occasionally.

Step 2

Add one egg to the melted cheese. Stir it well to make sure the egg is fully mixed in.

Step 3

Take another bowl, and combine the almond flour and baking powder. Use an electric mixer to combine the dry ingredients into the mixture from the previous step.

Step 4

Now that the dough is ready, form a ball and place it between two pieces of parchment paper.

Use a rolling pin to form a large rectangle out of the dough. The dough should be around a 1/4th inch thick.

Step 5

Use a pizza cutter to cut the dough into four rectangles.

Add keto pizza sauce on 2 squares. Then, top with mozzarella and pepperoni.

Step 6

Top each of these rectangles with a plain one, and seal the edges.

Step 7

Prick the keto hot pockets with a fork. Brush egg wash over them.

Step 8

Place the keto pizza pockets on the baking sheet lined with parchment paper. Bake for around 15 minutes.

Once the top becomes golden brown- you can remove them from the oven.

Let them cool before serving.
