Step 1

Place a pan over low heat. Put the cheese and heavy whipping cream inside. Continue stirring until melted.

Step 2

Add the vanilla extract and mix well.

Step 3

Remove the sauce from the heat, transfer to a dish, and store in the fridge. Reheat in the microwave and stir before serving.

💡Tips

1. Keep the Heat Low

The most important thing when making this sauce is to keep your heat on low the entire time. If you put the heat too high, the cheese will burn on the bottom of the pan before it melts properly, and burned cheese tastes bitter and ruins the whole sauce.

Low heat gives the cheese time to melt slowly and evenly into the cream. When I say low heat, I mean the lowest or second-lowest setting on your stove. It might feel like it’s taking forever for things to start melting, but that’s okay.

Be patient and let it work. The cheese will start to soften after a couple minutes, and then it will gradually melt into the cream.

If you notice any browning or sticking on the bottom of the pan, your heat is too high. Turn it down immediately and stir more. 

2. Cut the Cheese Small

Before you start cooking, take the time to cut your Gjetost cheese into small cubes. I’m talking about cubes that are maybe half an inch or smaller.

The smaller you cut them, the faster and more evenly they’ll melt. If you try to melt a big chunk of cheese, the outside will start breaking down while the inside is still solid, and you’ll end up stirring forever waiting for everything to melt. 

3. Don’t Rush the Melting

When you first put the cheese and cream in the pan, it’s going to look like nothing is happening for the first minute or two. The cheese will just be sitting there in the cream looking solid. This is normal.

Don’t panic and turn up the heat thinking it’s not working. The cheese needs time to warm up before it starts melting. After a couple minutes on low heat with constant stirring, you’ll notice the cheese pieces starting to soften around the edges.

They’ll start looking a bit glossy and will begin to break apart when you stir. This is when things start to come together. Keep stirring and being patient. The whole melting process usually takes about 5-7 minutes from when you first put the pan on the heat.
