Keto Breakfast Cheesy Meatballs

Breakfast can be one of the hardest meals to figure out when you are following a keto diet.

Keto Breakfast Cheesy Meatballs

Most traditional breakfast foods are loaded with carbs, and finding something that keeps you full and fits your diet goals is not always simple. That’s why I created these keto breakfast cheesy meatballs!

They are filling, taste really good, and give you the protein you need to start your day right. Plus, they are so easy to make that you can prepare them ahead of time and have breakfast ready for the whole week.

These meatballs are completely keto friendly, which means you can enjoy them without worrying about going over your carb limit.

They are made with ground beef and pork sausage, which gives you plenty of protein and healthy fats to keep you satisfied all morning long.

These breakfast meatballs are also incredibly versatile. You can eat them on their own, pair them with eggs, add them to a salad, or even pack them for lunch.

They reheat really well, so making a big batch at the beginning of the week means you always have a quick keto breakfast option ready to go.

👍 Why You’ll Love This Recipe

Perfect for Meal Prep: This recipe makes a large batch of meatballs all at once, which means you can prepare your breakfast for the entire week in just one cooking session. You won’t have to wake up early every morning to cook breakfast from scratch.

High Protein: Each meatball is packed with protein from the ground beef, pork sausage, and eggs. Protein is really important when you are on a keto diet because it helps keep you full, supports your muscles, and gives you energy throughout the day.

Freezer-Friendly: These meatballs freeze really well, which means you can make an even bigger batch and store them in the freezer for later. When you want to eat them, just take out however many you need and reheat them.

💡Tips

1. Don’t Overmix the Meat

When you are combining all the ingredients together in the bowl, mix them just until everything is evenly distributed and you can’t see any separate chunks of cheese or pockets of seasoning.

The mistake a lot of people make is mixing the meat mixture too much, which can make the meatballs tough and dense instead of tender and juicy.

Low Carb Cheesy Meatballs

Ground beef and pork sausage have proteins that bind together when you work them too much, and this creates a texture that is not as enjoyable to eat.

Use your hands to mix everything together because you have better control than using a spoon or mixer, and you can feel when everything is combined.

2. Let Them Rest Before Eating

When the meatballs come out of the oven,I don’t recommend eating them immediately even though they smell amazing.

Let them sit on the baking sheet for about 5 minutes before you transfer them to a plate or storage container. This resting time allows the juices inside the meatballs to redistribute throughout the meat instead of running out when you bite into them.

If you cut into a meatball or bite into it right away, you will see a lot of liquid and melted cheese come pouring out, which means all that flavor is leaving the meatball instead of staying inside where you want it.

FAQ

Can I use only ground beef instead of both beef and pork sausage?

Yes, you can use only ground beef if you want, but the flavor will be different. Pork sausage adds a lot of flavor because it usually comes pre-seasoned with spices like sage, fennel, or other herbs depending on what type you buy.

It also has more fat than ground beef, which makes the meatballs more juicy and moist. If you use only ground beef, your meatballs might be a bit drier and less flavorful.

Can I cook these in an air fryer instead of the oven?

Yes, you can definitely cook these meatballs in an air fryer, and they turn out really good that way. Preheat your air fryer to 375°F, which is the same temperature as the oven.

Place the meatballs in the air fryer basket in a single layer, making sure they are not touching each other. You will probably need to cook them in batches unless you have a really large air fryer.
