Step 1

Start by preheating your broiler.

Step 2

If you have regular pork rinds, place them in the food processor and blend (or just use the pork rind crumbs I recommended – so much easier and faster). Then, add the cheddar cheese and pulse until everything is combined.

Step 3

Roll small balls and press them down on the baking sheet , leave enough space between them.

Step 4

Place under the broiler and wait until the chips melt and are browned.

Step 5

Let them cool for 10 minutes (they will firm up). Enjoy.

1. Let Them Cool Completely Before Eating

I know it’s hard to wait when they smell so good, but you have to let these chips cool for the full 10 minutes.

When they first come out of the oven, they’re soft and floppy like melted cheese. They don’t feel like chips at all. But something happens as they cool down – the cheese firms up and becomes crispy.

If you try to pick them up while they’re hot, they’ll bend and possibly break. They also won’t have that satisfying crunch yet. Set a timer for 10 minutes and do something else while you wait.

After 10 minutes, they’ll be firm enough to pick up and they’ll have that crispy texture you want.

2. Store Them in a Container with Paper Towels

After your chips are completely cool, you need to store them the right way or they’ll get soggy.

Put them in an airtight container, but here’s the trick – place a paper towel at the bottom of the container, add a layer of chips, then put another paper towel on top before you close the lid.

The paper towels absorb any moisture that might develop, which keeps the chips crispy.
